California roll has become the most popular sushi roll in Japanese restaurants in the US. Anyone who started out eating sushi, probably started off eating this roll before venturing onto nigiri and sashimi. Here's a different take on it, most restaurants use kani, which is imitation crab sticks; but instead, try substituting this with shrimp. You still need avocado and cucumbers to go with this, or else it just won’t be a true California roll.
Cooking the shrimp with skewers will keep the shrimp straight, or else rolling it will be difficult. You definitely need to get some medium to large shrimp for this.

I thought California roll was crab and not shrimp. More common to find imitation crab now days but the original was crab leg.

Yes its true carb roll is for cali roll but in sushi you have your own name with own creat nsme

It was crab, but then they switched to crab sticks due to some importation laws. But you can use what you want on it.

The style is a santoku. Anything around the $30 range should be a good knife. I believe that one was a Calphalon. GL!

Curious but I started having sushi back in the late 70's. My Japanese bosses at the Japanese multinational I worked for would take me to lunch in Gardena, CA. Gardena on and around Western Ave. is wall to wall Japanese places. Everywhere from the really expensive joints to what was little more then street vendors. To be more Japanese you would need to move back to Japan. When I had my first California roll the nori was on the outside. When did it start to be made with the rice on the outside? Did some California Gaijin wake up one morning and say, gee I will put the rice on the outside so it was more messy when you ate it? Nice video and very well done. Thanks for sharing. I still like my nori on the outside as GOD intended. :-)

wilhard45 The reason they started to have the rice on the outside was to appeal to more westerners in the 80s. The reason was because most westerners were sceptical to nori as they had never eaten it before and this was a way to "hide" it.

@magnum -- Thank you, that is the first reasonable explanation I have read on the why of rice is on the outside. It makes perfect sense. I had my first taste of sushi in Okinawa while stationed there. It took me awhile to get used to the taste but yeah, I can see a bunch of pretentious prats trying to act sophisticated while peeling off the nori. Maybe that is why when I worked for a Japanese multi-national in California the bosses always took me to lunch with them. They knew I wasn't going to embarrass them in front of the sushi chef. :-)
