How to Make a Cheese Press / Dutch Style Cheese Press

Join me as I make a Dutch style cheese press here at in my little Missouri work shop.
Dutch Press Measurements:
Base: 10 x 7 1/2 x 1 1/2 inches
Base Sides: 18 3/4 x 1 1/2 x 3/4 inches (each)
Base End: 9 1/8 x 1 1/2 x 3/4 inches
Longest Vertical Piece: 21 x 2 3/4 x 3/4 inches Hole: 2 1/2 x 1 inches
Short Vertical Piece: 15 1/8 x 2 3/4 x 3/4 inches
Upper Horizontal Piece: 10 3/4 x 2 3/4 x 3/4 inches Hole: 1 1/2 x 3/4 inches
Center Plunger Arm: 18 1/2 x 1 5/16 x 1/2 inches
2 small side pieces: 2 3/4 inches long with a 45 degree cut (each)
2 inches from top of plunger arm, drill 12 holes 1 inch apart with a 3/8" bit
Using a hole saw, cut a 3 3/4 inch circle
Floating Center Board: 11 1/2 x 4 x 3/4 inches Notched on each end 2 7/8 x 7/8 inches deep
Hole: 3 1/4 x 7/8 inches
Press Arm Assembly: (overall length should be approx. 25 1/2 inches long)
1 - 16 x 1 1/4 x 3/4 inches
1 - 7 x 1 1/4 x 3/4 inches
2 - 9 x 1 1/4 x 3/4 inches
Hole: 2 1/4 inches long
Weight chart for press: closest notch is 3 x hanging weight / outside notch is 4 x hanging weight

I had that same RA Saw. I inherited it from my Dad. It broke my heart that I had to sell it back in the 90’s when my job got sent to Mexico after NAFTA was signed. Fortunately a cousin bought it so it’s still in the family and I get to use it from time to time. I’m first on the list to get to buy it back if he ever decides to sell it and he promised that if anything happens to him I will inherit it again. Although, he is 15 years younger than I am so I hope it never comes to that. Thanks for the video, it will be saved so I can make this press soon.

We have internet market place here where we live and I seen one the other day without the wood table for 40 bucks. It's been a good one for me for sure.

I am currently making your press and I wanted to add one comment so far: On the top horizonal piece (with the 1 1/2 X 3/4 hole), I found that I couldn't get the plunger arm into place because the angle was too shallow and the plunger base would get stuck on the main base of the press. All I had to do to fix it was use a bigger roundover bit to take a bit more off around the edges of the hole and that allowed the arm to angle enough to get the plunger base through and past the main base. I'm having fun building it and can't wait to make some cheese! Thanks for the great video.

Hello Brennan, it's been a while since I made the press. I do remember that I did have do something to that area to make it slide better. The presses are in another building or I would look now.. I've just had knee replacement and getting around isn't easy. I will check out what I did as soon as I can. Also I will post a chart of weights to pounds of pressure chart I have. This chart makes it easy to know the pounds your applying. Thanks again and enjoy your press.

@@OzarkMountainGoats I also noticed that I centered the hole in the top horizontal piece based on the piece itself, not where the center would be once it's screwed into the frame and butted up against the long vertical piece. So the plunger sits about 3/4 of an inch off center, but it should still fit a mold just fine. If not I can widen the hole a little on the top. Get well soon!

Hey, thanks so much for doing this video. It's clear and concise and I think I'm going to tackle making one myself. As a fledgling cheese maker I'm at the point of making hard cheeses so will definitely need a good press.

I finished building my press last week. I built mine out of Douglas Fir and I pinned the lever arm with hardwood dowels. It is plenty strong and it looks good too,. I am going to use it for the first time this weekend.@@OzarkMountainGoats

Thanks for this video! I see these for sale for $100-200 and it’s good to see how it actually goes together. I have to say that your process of ripping with the radial arm saw makes me want to close my eyes each time. This looks like a terribly dangerous way to cut (feeding behind the spinning blade). Perhaps there is a safer technique to teach to beginners?

Lol thanks for your concern about the saw. It actually has a part built in that keeps the wood your cutting from coming back toward you and another that keeps it from rising more than and 1/8" off table if set. Bought this saw new from Sears more than 40 years ago and have never had a problem. Your concern is very kind though. The video has helped several build a press. Is the center plunger arm really .5 inches instead of .75 like the other thicknesses? If so then the side pieces are .5 inches as well?

The plunger arm with hole is thinner than the other parts. This allows it to move freely when inside the weight arm slot. I would definitely use a hardwood for that piece. You could make it a little thicker but you have to make adjustments in other places. Thanks

@@OzarkMountainGoats Thanks for your help. I have another question: How do you calibrate the Press Arm Assembly ? I think that some math is required involving the distance from the 3" bolt, and some kind of weight scale. Your help is greatly appreciated. Thank You.
