How to make a Fish Brined 

Thank you for the vid! I've never brined at all before and unexpectedly came into possession of fresh caught tuna that I want to smoke and canned. What is "scarlet powder" or "starlet powder"...? It was mentioned right after you measured the brown brown sugar in your video. Also, you didn't state what type of salt to use and you didn't seem to be concerned. There are two types of table salt available. One is iodized, that other is not. I appreciate your video but I can't proceed with my brining with this missing information.
