⭐️SWEET POTATO PIE RECIPE
• Silky Sweet Potato Pie...
INGREDIENTS
Recipe for two 8 to 9 inch pie dish crusts
2 cups (260 g) all purpose flour
1 tsp (5 g) salt
14 Tbsp (200 g) cold unsalted butter (you can also use half shortening or lard)
7 Tbsp ( 105 ml) ice cold water
* extra flour for dusting work surface and rolling pin
INSTRUCTIONS
- In a large bowl combine flour, salt and mix well
- Add butter using a dough cutter and combine until mixture is at a pea sized crumble
- Now add ice cold water and using a butter knife, cut and fold dough to combine
- Once dough starts to clump together, with your hands, gently fold and form in to one large or divide in to 2 discs of dough
- Cover discs with cling wrap and refrigerate for one hour
- Take chilled dough and place on a lightly floured parchment paper and roll out into a 13 to 14 inch diameter round circular shape
- Once dough is rolled out, lift parchment paper and flip dough on to a 9 inch pie dish
- Now gently peel away parchment paper
- Fold over any pie dough over-hang and crimp the edges into desired shape or design
- Place pie dish with prepped crust back in to the refrigerator for at least 20 minutes or until ready to use
- To blind bake pie crust, cover with parchment paper, add beans or pie weights to the center and bake in a preheated oven at 375ºF /190ºC for 20 minutes
NOTE: To ensure flaky crust, be sure to work with cold ingredients and refrigerate after rolling out to chill right before baking

I always use shortening, it makes the best crust. People say, well shortening is not healthy, agreed, but I don't make pie every week, so shortening a couple times a year is not going to do anyone in. I use the pie crust with the addition of egg, less water, plus an egg (and vinegar), makes the most incredible crust and you don't have to do the whole ice cold thing bc the egg solves that issue. You don't even have to refrigerate the dough, you can use it immediately if you get a late start.

It's a matter of taste and definition. Americans tend to call "flaky" , crust that actually "crumbles". Flaky to me is like pastry, a croissant, but not soft but toasted. I have never tasted a shortening crust that taste any good. Of course like everything else in life, If you were brought up on it to you it will taste normal. Is not so much the health issue but it taste like nothing it's like a baked cracker. A butter crust on the other hand can carry its own weight in flavor and provide contrast to a pie and elevate its flavor.

Two of my favorite pies. I cook and bake but never ever made a crust. Maybe I’m brave enough to try. My dad used to make the best super flaky crust (in the flat lands). Altitude may make a difference now. 🤔🏔 thanks for the encouragement.

This is exactly how I was taught to make crust by my husband’s grandmother many years ago, so you are in great company dear lady. Excellent video! And by the way, I love the crust as much as the filling!

Here's my report : I have been searching for the PERFECT flaky crust recipe for nearly 2 months. On a whim, I looked on this channel. I'm a huge QUICHE lover and I needed a buttery, flaky crust for my quiches. So....I tried this recipe and I am pleased and proud to report that my search is OVER !! I just made a SHRIMP & SALMON QUICHE using this recipe and I am OVERJOYED at the results. This crust is the absolute TRUTH. It can be used on pies as well as food dishes. I am a WITNESS, y'all. I made this pie crust today to use for a chicken pot pie. This is the tastiest and flakiest crust I have ever made! My pie pan was a deep dish 9” and I didn’t quite have enough dough to have a fancy edge but I tucked the top in and sealed as best I could, made a few cuts on the top to vent and the results were delicious. Thank you for a wonderful pie crust recipe, I’ll definitely make this again.

Hi, looks great! I make my crusts the same way. Yes, cold water is the secret to great crust! I use dough hooks on my beaters to make a ball. I use the handle end of my wooden spoon to flute the edge of my crust after I trim evenly and fold under rather than over. Great video and so much better than store bought crust too. Thanks!😊

Thank you for sharing This recipe. I like the bowl. I never thought to use plastic wrap role...i used to use a can lol...like u said what ever works. Now, I have a roller. I love the way your pie crust looks. I make my own but it's never that thick and full. Thanks! I'm definitely will be making this soon. Love your channel. God bless.

Thank you for the recipe and the directions. I missed a few steps when I make made my pie crust yesterday. I did not chill the dough before rolling it out and did not chill before I filled the pie. Thanks for this recipe.

My favorite part of any pie is the crust. I have been guilty for just eating the entire crust and leaving only the filling, lol. But that pie looks out of this world good! Can't wait to see the recipe for the pecan filling. You're amazing at what you do!

Try using 7UP next time as your liquid. That’s what my Grandma used and it’s the true secret 👍🏽 the bubbles and added sweetness ♥️♥️

Can not wait to try your pie crust recipe i have tried other recipes but can't seem to get it down, btw one time i didn't have my rolling pin in hand so i had used my wood cleaner Bottle with lid on and i had made sure to rinse the bottle before using and it had worked Lol my brothers tease me til this day 😁

My grandmother had cloth just for biscuits and crust. I personally don't use the the counter top without being covered.

Did you pre-bake the crust when you made the pecan pie? I have the last two times I made pecan pie and I'm really wondering if it's even necessary to do so. I think it might be causing me issues and overcooking the crust.

Looks like the pie dough could've used extra time in the fridge. You can see the melted butter and shortening smeared on the plastic wrap. It also helps to work in a cool kitchen with cool countertops. I think working with the roll of Cling wrap may have also affected the temp of the dough. The warmth of hands transfers onto the roll and the pie dough. I've heard of others using wine bottles, paper towel dowels, etc. You have to improvise 😁 I actually FREEZE my pie crust to ensure that the shell holds its shape during baking because of the high fat content of pie crust. Beautiful, delicious result! Thanks for sharing.

Yes. I use King Arthur's unbleached flour and it works fine.😊

How far ahead can you make the dough?

During the holiday season I prep pie dough and freeze it for up to a month with out issue. I thaw it in the fridge and use when it is thawed. Works great!
