I'm making this now. Don't have the coconut extract or flakes so I used coconut milk. Hope that works. Will make again because I just bought the extracts (after I put the cake in the oven. 🤦) Added crushed pineapple into the mix as well. 😋

My sister substituted the "regular" instant pudding mix with the "sugar-free" pudding mix. Thanks for suggesting that we can use "unsweetened" coconut, as well. ;-D The cake came out fabulous! I made this yesterday for my Thanksgiving table. I followed your instructions to the "T" and it was a HIT!! Although I did not eat any (I am on a keto diet right now and this was off limits for me) everybody else loved it. Thank goodness I doubled the recipe and made two cakes so there was enough for my crew. Even my hubby who does not really like sweet treats asked for a second serving. Thank you so much!
