Ingredients:
1 cup all-purpose flour, spooned and leveled
1 tsp baking powder
1/2 tsp salt
6 large eggs, yolks and whites separated
1 tsp vanilla extract
1 cup sugar
1 cup whole milk, divided
14 oz can sweetened condensed milk
5 oz can evaporated milk
Whipped Cream Topping:
1 1/2 cups heavy cream
3 tbsp powdered sugar
1 tsp vanilla extract
fresh sliced strawberries
Directions:
To a bowl, add all of the dry ingredients, mix together and then set it off to the side. To a big bowl, add in the egg whites, vanilla extract, and mix with an electric mixer until stiff peaks form. While mixing the egg whites, slowly incorporate the sugar 1 tablespoon at a time.
Once you have stiff peaks, continue mixing while adding in 1 egg yolk at a time. After all six egg yolks have been added to the bowl, we're going to do the same thing again, only this time with the dry ingredients.
To the bowl, slowly add in the dry ingredients, alternating with half a cup of milk. Scrape the bowl as needed.
To a 9x13 inch baking dish lined with parchment paper, add in the cake batter. Into a preheated oven at 350 degrees for 25 - 30 minutes. Mine was done at the 25 minute mark.
Let your cake completely cool on a cooling rack before moving on to the next step. Please note: the cake WILL shrink during the cooling process, this is completely normal.
While the cake is cooling, make the tres leches. To a bowl, add in the sweetened condensed milk, evaporated milk and the remaining 1/2 cup of whole milk. Mix until the sweetened condensed milk is no longer visibly thick.
Once the cake has cooled. Take a fork or skewer and poke a bunch of hole all throughout the cake. Pour the milk mixture over the completely cooled cake. Cover and let the cake soak in the fridge for at least 6 hrs, preferably overnight. It tastes soooo much better the next day!
After the cake has absorbed all of the liquid, you can make the whipped cream topping and add it to the cake in an even layer. Simply add all of the ingredients to a mixing bowl and beat until stiff peaks form.
Add sliced strawberries to the top of your finished cake. Please note: freshly cut strawberries will "bleed" onto the whipped cream topping after a period of time left on top. If you're concerned about the presentation of your cake, I would suggest adding the strawberries to the top just before serving. Enjoy!
