How to make an Authentic Berbere Spice Blend | Ethiopian Cuisine & Recipes | Salt, Sugar & Oil Free

Berbere is a fiery spice blend integral to Ethiopian and Eritrean cooking, in which it adds a heady depth of flavour to any dish. While this spice blend can now be found in specialist stores, you can't beat the aromatic freshness of this homemade version. Recipes may include different variations, depending upon your region in the world and availability of ingredients. This spice is very much a cornerstone ingredient in these authertic cuisines. Some lesser known spices such as korarima, rue and ajwain, may be hard to track down, so feel free to replace or omit.
This berbere recipe can be used in countless Ethiopian and Eritrean recipes, in which I look forward to trying and covering.
INGREDIENTS
WHOLE SPICES
2-3x kashmiri chillies
2x ancho chillies
1/2 tsp fenugreek seeds
2tsp coriander seeds
1tsp cumin seeds
4-5 cardamom pods
1tsp peppercorns
2tsp crispy onion
GROUND SPICES
3tsp paprika
2tsp cayenne pepper
1tsp turmeric
1tsp garlic granules
1tsp ground allspice
1tsp nutmeg
1tsp cinnamon
1/2tsp cloves
METHOD
1. Toast the chillies and whole spices in a hot, dry pan until fragrant.
2. Transfer the spices to a spice grinder and blend to a powder.
3. Add the rest of the spices and blend to finally combine.
4. Store in an airtight container.
This recipe will keep for 6 months.

Thank you James-- I was talking to you on the FB group tonight about my friend's injura and came here to take a look. My husband might want to try this. He misses the super piquant sauce-- I have a much wimpier Northern palette but I like the idea of being able to make the blend myself-- I could go low on some of the fire that way. Nice meeting you!

Aw that was excellent James. Though we live in a predominantly Greek neighbourhood, there's a massive Ethiopian community only a couple blocks away, and the dining is spectacular. We've never done up our own berbere blend, but this is a great project to undertake, and it makes for the base of some of our favorite stewed dishes. Misir wat, yes please! Thank you for this James!

Something magical about toasting spices :) Im very interested in the Ethiopian cuisine because i think its very vegan, thanks for sharing the key spices in Ethiopian cuisine, never eaten Ethiopian food.... also looking forwards to seeing some recipes made my Lomi... black garlic never seen that before... very pretty spices, love the writing and editing tweaks... wish i could taste it :)

This looks incredible and just up my street. I absolutely love flavour and spice. I tried Ethiopian food for the first time this year at Vegan Camp Out and I was not disappointed. I’ve actually just released another Ethiopian recipe. It’s great in a very basic curry called Shiro Wat but you can add it to anything, even coat your chips or wedges in it! James

Yes, I’m forever mispronouncing cultural and new words but I do make an effort to do my research and expand my knowledge.
