How to Make Aquafaba & Cook Chickpeas From Dry | Mary's Test Kitchen

Aquafaba is a brilliant vegan egg replacer that can whip up into meringue. This video will show you how to make aquafaba from scratch; from dried legumes. And as a bonus, learn how to cook chickpeas from dried; or take it the other way around.
'Aqua' means water and 'faba' means legume. Aquafaba is simply cooking water from cooking legumes such as chickpeas and white beans. When concentrated, the water is thick and vicous like egg white. And it whips up very similarly to egg white!
FOR SUPER SOFT CHICKPEAS add a half teaspoon or so of baking soda to the cooking water at the START of cooking. Note that this will change the pH of the liquid so it's not ideal for making aquafaba. After the chickpeas are as soft as you want, rinse them really well to get rid of any remaining bitter-soapy taste from the baking soda.

I've made the vegan choc chip cookies you posted MILLIONS of times, and all my meat eater friends love them more than non-vegan cookies! I make hummus with the leftover chickpeas! Thanks for this tutorial!

I've been using aquafaba to make soup stock for the past few years now. LOL, I didn't even know it was a thing. I thought I was being all "cutting edge" and what not. I think it's the closest thing to vegan chicken stock I've found to date. I just cook the chickpeas with a little salt, and wallah -- hard to tell the difference. I haven't reduced it after straining it off of the chickpeas yet, but your chocolate chips cookies are next on my to do list, so yeah... It's happening. Soon...

You know, I was a chef for about 12 years, and to be honest, since transitioning from conventional eating to more of a vegan/vegetarian diet, I've struggled to find interesting things to do with food. I just kinda stick to basics, because they're familiar and easy. Your channel has inspired me to want to cook creatively again, and I am so grateful to you for that. Seriously, I can't thank you enough. I've been yapping in my wife's ear about you for the past few days now. This is insane! I've been throwing away chickpea water week after week (I make chikpeas with a pressure cooker -- they are done in 30 mins!). I've also been lacking a great egg replacement. That this works is incredible! It is cost effective, and seems amazing versatile! I cannot wait to make some of my own and store it for a rainy day!

Thanks a lot. I just bought myself a bag of chickpeas with aquafaba in mind, but with no idea how to go about it. This instruction video will hopefully help me make some great aquafaba so I can get bakin'. One thing I've found hard about going vegan, was all the cakes I didn't get to eat anymore, because they usually contain one or more non-vegan ingredients. I have a massive sweet tooth, and as we all know, life is so much more enjoyable when you get your piece of the cake.

Hi Mary! I've been subscribed to your videos for a while now and really enjoy them, even though I'm not a vegan myself, because I like your upbeat delivery, non-preachy and non-holier-than-thou attitude. I really like how this is simple and economical instead of intimidating trendy and expensive. Your new pot however is trendy in a good way. Good job to your boyfriend for picking a pretty white model.

Awesome... thanks for sharing .... and one tip .... cooking chickpeas in a pressure cooker will hugely shorten the time of entire process. Pressure cooker takes about 20 -25 minutes to cook any size of batch of chickpeas...

Reduce/boil the aquafaba down to one third (or more) and it will turn stiff twice as fast (within five minutes) when you whip it.

@@cherishcakes1384 Disaster? Do you mean that it did not get stiff? It needs to be reduced, ice cold and you need to whisp it (with sugar) on top speed. Good luck! (Actually you shouldn't need luck to succeed, but anyway ---.)

I did get stiff peak, but after few hours it released water and the soft creamy texture was replaced by lather, just like detergent lather😔

I cook my chickpeas in a InstantPot pressure cooker. I haven't tried the aquafaba yet in meringue but it works good as an egg replacement.

Thanks for the measurements when cooking dried chickpeas. I love humous. Or potato in chunks with a few peas, chickpeas. And Indian spices mixed into gently fried onions and then all combined. In soups.

this was excellent thanks. I sprout my chickpeas before I cook them so it will be interesting to make the Aquafaba from this. The sprouted chickpeas also cook easier I usually put a lid on the as well on a slow simmer. Blessing

Fantastic idea. Who knew we could find yet another use for beans. I love the idea that this single technique creates multiple possible things - cooked chickpeas as well as deserts and snacks. How very efficient is that? I will be putting this to use in my kitchen very soon!

1:36 I'm indian and in my household we use a pressure cooker to cook chickpeas. 3 whistles on a pressure cooker will do. No need to cook for an hour.

I have got to try this sometime! I think I would want to try out the liquid in a gluten free bread since that can be harder to make vegan, and I love to use chickpeas for "tuna" salad, which is all the regular tuna salad stuff (mayo, chopped cellery, relish, ect) but with mashed chickpeas instead of fish. If all went well I could have chickpea salad snadwiches to eat!

Great video Mary! I'll have to experiment with aquafaba asap! Do you ever use a pressure cooker? I don't know how people survive without one. You'd have your soaked chickpeas (and any other bean or legume) cooked in 20 minutes or less. Essential kitchen tool :)

I've heard before that the liquid from the tin can be used in such way but I thought it was disgusting, simply because I don't know what's in there exactly and it didn't look good, haha! I guess this looks similar, however, I know what's in there and it doesn't look scary. In fact I hardly can wait to try, I've been just discarding the cooking liquid every time and I don't like to waste. Thanks so much for this vid

I had no idea you can use the leftover cooking water from beans as l was taught to believe it is poisonous and should be thrown away! l gotta try those cookies :) l also have one more request - you mentioned in your last video you know a lot about natural remedies and you was taught them from a young age, that sounds like a music to my ears - l am all about natural remedies and would love to see more of them, like a natural remedies series, whether here on on your other channel - could you do that please? I learned about aquafaba from a post on Facebook post by Goose Wolt in the facebook group humorously named "What Fat Vegans Eat." Thanks for your request, dear. I am planning on doing a video about what remedies I'm using for supporting my hand/wrist healing. Once it's better. I'm honestly not sure whether to put it on this channel or the other one. I would include only one or two food related recipes but the rest is to do with exercise and topical treatments...

I just heard of Aquafaba (today) while searching for something else and so I started looking up the videos on how to make it. There are plenty of can versions of Aquafaba, yet I only buy dry chickpeas. I was was wondering what was so special about the can chickpeas that dry chickpeas couldn't be used, and then I came across your video. I am glad I don't have to buy canned chickpeas. Thanks for sharing! I will have to give this a try. I did have a question though. I see some people use cream of tartar in their recipes, however, I noticed you didn't use it. What is the benefit of using cream of tartar vs not using it? I don't use cream of tartar, so I was wondering if it was something that I needed to purchase. Thanks for your help.

+angela14962002 Cream of tartar is used to stabilize, making the stiff peaks hold and stiff than without. However, I have used it and not used it and find little to no difference. I am lucky that I live in a climate where the air is dry. Lucky for meringue, not so lucky for my skin and hair but whatever ;-) Humidity is an enemy of meringue and can cause it to deflate. Somehow cream of tartar seems to counteract this effect. In short, try it without and see if it works for you. Remember that one cup of chickpea produces one cup of aquafaba so reduce the liquid as necessary at the end of cooling and straining the chickpeas. If you find that you've been beating it for 30 minutes and still no peaks, then consider using cream of tartar. Some people have tried lemon juice; I'm not too sure if that works.

aquafaba for sponge cake requires a little more in terms of stabilizers so I recommend checking out Moira Wright's whey yolk technique :-) Great ideas!

I made ice-cream with it and it's amazing. I can't stop eating it. The meringue was a fail for me because my oven can't be set to a certain temperature so everything kinda melted.

+Red86 I used a mixer and whipped it until it became a foam(omg sorry I don't really know how to explain it), just like when you're doing meringue and then added sugar and blended a little more. In a separate bowl I mashed some bananas and raspberries and after that I just slowly incorporated the two together, pouring the banana mix over the foam spoon by spoon so it doesn't collapse. Then I put it in the freezer. I tried it many times and the thicker the foam, the better the ice-cream because it doesn't get as many ice crystal and the texture is nicer and creamier. Hope it helped.

I cook my soaked and rinced chickpeas in my instant pot (pressure cooker) I don't reduce the aqua faba and it works great.

Hi great video! Two questions.1) Can you use the juice directly from the first cooking for mayonnaise? 2) how long does it perserve in a bottle in the fridge for further use?

I recommend letting the chickpeas sit in the liquid overnight. The aquafaba's emulsifing power is more reliable that way -- key to making mayo. Aquafaba will only last a few days in the fridge. You can freeze it for up to two months for longer storage.

+FruityFoodie Yes! Google "aquafaba pressure cooker" and you'll find a few articles with the instructions. I don't have a pressure cooker so I can't really say which ones work best. I have heard that with a pressure cooker, you don't need to reduce the aquafaba either. Good luck, dear!
