So quick and refreshing!! Make this for a side at dinner or add chicken and have lunch for the week! Top with cashews or peanuts for an extra crunch!
Ingredients:
Salad-
2 zucchini, spiraled thin
3 medium carrots, grated
1/2 c. fresh mint & parsley, coarsely chopped
1 cucumber, halved and thinly sliced
1/2 red bell pepper, small diced
1/2 cabbage, shaved thin against the bias
3 scallions, sliced thin
Dressing -
1/4 c. olive oil
1/4 c. soy sauce
2 T. fresh ginger, minced
1 T. honey
2 cloves garlic, minced
1 lime, juiced
Sriracha, to taste
Directions:
Dressing:
Whisk together olive oil, soy sauce, ginger, honey, sesame oil, garlic, and lime juice. Set aside.
Salad:
1. In a large bowl, combine the carrots, chopped mint, chopped basil, zucchini noodles (chopped), cucumber, bell pepper, cabbage and scallions.
2. Add the dressing to the bowl and toss together gently until coated. Top with Sriracha. Enjoy!
