Sharing and an authentic recipe for Mysore Rasam in this video, using the traditional method of preparation including a homemade Rasam masala powder which adds just the right flavor
Rasam is a traditional South Indian dish renowned for its aromatic blend of spices and tangy flavor. Originating from the southern states of India, you’ll come across so many variations of this dish like the Thakkali Rasam (Tomato Rasam), Kollu Rasam (made from horsegram), Garlic Rasam, Pepper rasam & so many more. Although each of them is different in taste, all of them share the spicy & tangy flavouring which comes from the Red chillies, Tamarind or Tomatoes. This wholesome & comforting rasam not only delights the taste buds but also offers numerous health benefits, including improved digestion, enhanced immunity, and anti-inflammatory properties, making it a nourishing addition to any meal. I got to learn a special Rasam recipe, in the weekly Cooking class at the INDUS VALLEY AYURVEDIC CENTRE, in Mysuru. This dish has a simple yet elaborate recipe, made from basic spices & vegetables, yet it always adds a zing & zest to our meals. What increases the authenticity of this recipe is that we make the Rasam Spice mix from Scratch. This adds maximum flavour which comes from the freshly ground masala. As this recipe is shared in a Wellness Centre, the Instant Rasam Masala & the entire procedure to cook this dish, align with the principles of Ayurvedic cooking. Ayurveda emphasizes on the importance of balancing flavors & using natural, fresh ingredients to promote health and well-being. This ensures that the food is cooked to perfection - high in flavor as well as nutritional value. This gem of a dish is a staple food in South India, whether served with rice or sipped like soup, Mysore Rasam is a wholesome and comforting dish that brings flavour & comfort to every meal.

Ingredients (Serves 2-4)
1 teaspoon black peppercorns
1 tablespoon coriander seeds
1 teaspoon cumin seeds
4-5 dried red chilies
10-15 curry leaves
2 tablespoons chana dal
3-4 tablespoons toor dal
1 teaspoon turmeric
1 teaspoon mustard seeds
6-7 cloves of garlic
2 tablespoons grated coconut
A pinch of asafoetida (hing)
1 tablespoon tamarind
2-3 teaspoons coconut oil
4-5 tomatoes
Jaggery syrup (to taste)
Salt (to taste)
Easy Recipe for Rasam
For Rasam Powder, in a pan add coconut oil, Coriander seeds, chana dal, Cumin seeds, Black peppercorns, Red chillies, curry leaves, turmeric & asafoetida, then add freshly grated coconut & saute until it turns aromatic. Let it cool completely, then grind into a thin powder, and Homemade Rasam Masala is ready!
For Tamarind Pulp, Soak the tamarind in warm water for about 20 minutes then squeeze and extract the juice.
For Rasam, Add Tomatoes, Curry Leaves, Toor Dal, Garlic, Turmeric & 1 cup of water to a Pressure cooker. After 4-5 Whistles, let it cook & then mash it through a strainer. Put this on heat & add Rasam masala & tamarind pulp and let it simmer. Once it starts to boil, turn off the flame & add jaggery syrup.
For tempering, add coconut oil, mustard seeds, curry leaves, Dry red chillies & Asafoetida to a pan, then mix it with the Rasam. Spicy & tangy Mysore Rasam is ready! Serve hot with steamed rice or enjoy it as a soup.

I think in Karnataka, rasam is called saru and in some places in Karnataka, sambhar as huli.

Madam, as i am manglorean our family once a week make rasam with all the ingredients you have mentioned. Some we use simple one like while making red chana gravy..we steam red chana in cooker. After steaming instead of throwing red chana water we boil it and give tadka over them. In case few red chana left inside water no problem.it enhance taste while serving alongwith rice. I stay sepwrately becoz of job but when i come home once a month on sunday and if my sister in law make rasam i ignore other things and prefer rasam becoz dal easily get in every restaurant but rasam , only south indian prepare very well .
