There is nothing worse than spending good money on a brisket, then trimming 3-4 lbs. of fat off and throwing it away. Good news! That fat and trimmings have good uses. That's right, don't throw away those brisket trimmings! In this video, we will show you how to make beef tallow, aka liquid gold. It is a very simple process and the end result is something to behold! There are many uses for tallow, including making candy, soap, candles and as a lubricant for wood, leather & metal working and many other items but for us, the best use of all is for cooking. Simply use tallow in place of butter or oil and you will have a kicked up meal with no extra effort. That beefy flavor lends a hand to even the simplest of meals. Back when McDonald's had the best fries anywhere, it was because they fried them in beef tallow. I miss those fries! Use it in a stir fry, for sauteing vegetables....anything you use it on will benefit from the flavor!

After seeing the snippet on IG, I couldn't wait to watch! First thing I did this morning! As someone who has a Mason jar of bacon fat on my counter, I approve! But for me, the best part was finding out there is a plancha insert for the Egg! I love my Camp Chef, but this is SO SO versatile! Smoke, grill, griddle, roast... All on 1 piece of equipment! Thanks for an awesome piece Ron! Everyone has a brisket smoking video up, but the tallow recipe? That's all you sir!

Heck yea, The trimmings from mine I made tallow and the meat trimmings I mixed into venison jalapeno sausage and made the best smash burgers ever. 😎👍

I dry aged an untrimmed rib roast and then rendered the dry aged fat in my smoker when I was smoking my prime rib.

That was fun! Duck Confit next! lol We used coffee filters when we'd make it in culinary school and then in the restaurant. they have those huge ones for the monster coffee makers.

Yes! The coffee filters also work well but the oil really has to be hot in my experience.

Same method I use for making schmaltz and gribbenes from chicken skin and fat. I like to add sliced onion towards the end of rendering to flavor the schmaltz. I totally agree with The Dude Network; the fried up bits are awesome, especially with some salt, granulated garlic, and a touch of smoked paprika.

@@FOGOcharcoal Make sure they're a crispy golden brown and not carbonized at all, and you should be good. Curry powder is a nice seasoning as well.

Well at the cost of charcoal, I would just boil it on the stove. My charcoal is restricted to meats 🍖. Good stuff.

I have had both and I just preferred the BGE. I know many people who have the KJ and they are very happy with it too, including the owner of FOGO. For me, it is BGE but that is just me.

I've read that it can be stored at room temperature for around a year and indefinitely in the refrigerator.
