How To Make Beer Brine Spatchcock Chicken On The Oklahoma Joe's Bronco | Better Than Beer Can??

Welcome back folks!
In today’s video we’re going to be smoking up a beer brined spatchcock chicken out on the Oklahoma Joe’s Bronco.
Step 1. Spatchcock the chicken: You’ll want to use meat shears and cut down each side of the spine, remove the spine, and then use a knife to break the breast plate so the chicken will lay flat.
Step 2. Brine: Now we’re ready to brine. You’ll want to add one beer of your choice, a cup of salt, a cup of Chipotle Honey Garlic Sauce (I’m using Frank’s Red Hot Brand), and the sliced center of 3 whole lemons. Drop them all into a bucket or bag together and let them soak and absorb over night.
3. Seasoning: After about 2hrs you can remove the chicken from the brine and prep for seasoning. I like to pat the chicken dry before applying my rub. I also pull back/loosen the skin from the meat. Today I’m going to use Kosmo Q’s Honey Chipotle Killer Bee (or something like that) but you can use whatever your favorite chicken rub is. I make sure to pull back the skin and season underneath it, directly on the meat. Then I season the skin on top and bottom of the chicken.
4. The Pit: Depending on your pit you may want to use an indirect method for this cook. I’m using the Bronco which allows me to cook right over the coals but maintains a distance so the chicken doesn’t burn. I won't be using a heat deflector today, I want the chicken to drip onto the coals and steam back up. I’ll be running the pit as high as I can get it, anywhere above 350 is good. I’m using a cherry wood, some thyme, rosemary and lemon for added smoke flavor.
Step 5. The Cook: Once your pit is above 350 it’s safe to put the chicken on. Let the chicken go until the internal temp of the breast is 165. Feel free to flip the chicken around 130 to help crisp the skin. Once the chicken hits 165 internal you can pull it off. Give it a quick rest, be careful though, it’s juicy and may cause a flood :)
Step 6. Eat: After the rest you're ready to slice into the bird. Feel free to eat it as is, pull it and make sandwiches, tacos or some insane buffalo chicken dip! Either way it will be delicious!

Very informative video and easy to understand, will try your receipe soon with my new Bronco. Normally after smoking, you have left over charcoal burning, what did you do with it, please advice, thanks.

My first time using then O Joe's Broncho. My temperature BBQ 300. I want to smoke chicken drumstick. How do I reduce it to smoke 275. Try many ways but it doesn't works. I open the lid and the temp go to smoke, closed the lid, the temperature , back to 300, please advice. Thanks
