Hey Joe, just now getting to watching this one. What a fine job you did. You really know how to dial in a pit of any kind. That's one thing I love about watching you cook on anything. The loin looked terrific. I agree between the Uncle Steve's Rub and the Sweet n Spicy sauce, that was a winner winner. The vegetables looked delicious also. Nicely done. Thanks for showing off my sauce and I'm glad you like it. Still want you to try the Cherry Habanero. Similar but with more flavor. Great cook and you keep on. You have too much talent to stop. Sometimes it just takes longer to get to the fast moving water. Your channel has top notch content.

I'm doing the best I can and 99% of the time everything is on the fly. We love pork loins here and yes I would love to try that Cherry Habanero.. I thought you sent me some a while back and it didn't last long lol.. I've been using Uncle Steve's Shake for while and love it. I placed a large order last week. We use it on everything.. #unclestevesshake

It was my first time using lump in that smoker and took about 20 mins longer for the smoke to clear. In my next video I'll be using less lump and more splits.. I love trying new things out.. Thanks Dash..

This was the best whole tenderloin I've ever made taking it to 150F internal meat temps and letting it rest for 30 mins.. So so good..

I’m looking to go with the long horn reversed flow smoker. I’ve used an old master built upright gas with chunk wood burner and had great luck but it was a solid door and I wanted a glass one. Now I’ll switch to Oklahoma Joes offset and git er done I don’t want a gas one or pellets s either.

I'm hoping to have that mobile pot back by the end of this month.. I think you'll be pretty impressed.. The OKJ did great with the lump but took about 20 mins longer to clear. Next time I'll use lump to start the coal bed then add splits for the rest of the cook. Thanks brother..

Joe that thing was gorgeous! Beautifully cooked and PIF's sauce shined up awesome. Looks crazy good! Perfectly cooked and love your potatoes mixture. I've been wanting an offset for a long time. It's the only cooker I don't have. I'm sold this is the one I'll go with. Thanks for sharing this and stray warm!

I promise you that you won't be disappointed in this okj reverse flow unit.. Nobody will convince me otherwise and I promise this isn't a paid video nor did I get it for free. I own a very expensive mobile smoker but this okj is perfect for beginners and advanced users.. There was a Amazon store that was selling it for $600 shipped but there out of stock now.. @@BBQJOE I will. Can you trust the thermometer that’s on the grill? What should that read if you want the grill to be at 250??

I don't like stock gauges at all. You should be fine for a few cooks. I went with x2 river country's cause they are inexpensive and accurate. Just keep in mind the left grill gauge will read hotter by 5-10F degrees cause of the heat rolling out of left side and the right side gauge will be more accurate. Now the left grill grate will be slightly cooler then the right side closes to the firebox cause of the main heat source and the fact the firebox is attached to the main chamber. I also recommend doing a dry run before your first cook using a 2 or 4 probe meat thermometer so you'll have a good idea on grate temps. I think you'll do just fine though. Hope this helps..

Not trying to bust your balls here brother, just trying to help a bit: That said, With all of the natural wood that you have available, Im wondering why you used coal of any kind beyond using it for the initial lite (a few med sized lump under a few splits to establish a nice coal bed). Once burning, use wood only, and add a split or two every hr or so. From there, adjust your dampers in order to create enough air flow to maintain a Med to Low blue'ish smoke from the chimney.. the thick billowy smoke we saw here is the opposite of ideal.

Trust me brother I've started this OKJ many times (off cam) with a half a chimney of charcoal to run just splits and 1 time (never again) with just splits.. My point of my videos with this OKtJ is to help beginners to achieve maximum burn time without having to add splits and get 4.5 hrs of burn time and still get great flavor.. Most people want a set it and forget cooker so I'm not understanding the bursting of my bubble thing.. Don't be biased bro.. You know I have a massive mobile smoker that's very efficient but at the same time I don't want my followers to give up on fire management pits.. I promise after time I'll show how you and can master this.. You have to trust me on this..

You seem to like the Oklahoma joes longhorn reverse flow. It seems to have gone up very slightly in price recently. (It is currently $700 on amazon) Meanwhile, Char-Griller actually have a new $500 pit (the grand champ) out with similar (if not heavier) steel, two sliding racks totaling 1,200 Sq inches, and a 5 inch diameter grate level smoke stack; as well as pre-gasketed doors, (meh) gate level bi-metal thermometer ports, a sturdy looking fire-basket, and a slide out ash-pan that looks like it will help prevent rust out from ashes on the bottom if you take care of it. . . I'm very torn between these two smokers. What do you reckon?

This is a really good question.. I haven't seen the Grand Champ in person but from my research it looks really nice and priced right.. I like the sliding cooking grates and the way the main chamber is built. I would buy one if they come out with a reverse flow model. I'm sure with a a couple mods this could be a great smoker.. The OJK Longhorn has been out for a while and can be converted to a regular offset or to reverse flow.. IMO $700 is a lot for the Longhorn.. I love cooking on it but If I had to choose today I would save the money and buy the Char-Griller Grand Champ and spend the savings on food or a stock up on charcoal when it goes on sale. Hope this helps..

Unfortunately it's no longer available.. Phil Roger had pasted away months ago.. It was sad moment for the bbq community. It was some amazing sauce though.

Nice Cook Joe, Did that Oklahoma Longhorn come with tuning plates in the bottom to adjust heat? Thanks for the cook. Just for the record, your lighting isn't the best, but we could see the smoke ring no problem... it was actually better when you held it away from the camera a little...

Yes it comes with the defuser plates but they're not adjustable. You can separate them though if you want.. And yeah I need some better lighting indoors cause I'm always readjusting the angle for the cam to focus.. Thanks for liking the cook and for watching..

When you pay over $1800+ in camera equipment to be outside recording then you think, f*&k my cam gear is getting snowed on that can ruin it, then what would most people do..? yes correct, end the video to protect their investment.. What did I do..? Took the risk for my subscribers to push forward no matter what.. BTW this was a 3.5 hr. cook which we had 2" of snow fall during this 3.5 hr. cook.. Not 10 to 15 mins..
