It’s 2 AM and I can’t sleep and I just discovered your channel and I’m really enjoying your videos. I really like the jars that you use. I have 64 ounce jars also but the mouth is not nearly as wide as yours. Also since I’m new to fermenting, I never thought about putting beets an apple in with red cabbage. I’m going to try that tomorrow morning.

I have 2 large organic green cabbages from a November run to my local CSA stand but have been intimidated to try this-lol. I also have some beets so was wondering about subbing green for red cabbage-thoughts? Is it's alright if it's not the freshest of fresh, within reason obviously? Also quick question about salt ratio's-what percentage of the wt of the cabbage to salt do you use ,and I'm assuming it's the total wt of ALL the veggies/fruit added, right? Just discovered your channel-thanks for the clear, concise and succinct information presented-thoroughly enjoyed watching!

Hello from a senior in Chicago. I have white turnips and kohlrabi from the farmers market. I dehydrated some, baked some and made slaw. Can I, and how do I ferment it?

one thing most people do not Know is that RED Cabage avoids cabage worms , the green color of cabage atracts the moth that lays the eggs that mature into Cabage worms ! so a friend showed me that Red cabage don't atract the moths !

That's really interesting! We had an ongoing battle with cabbage flies in our garden last summer (but attacking our kale, which is a cabbage relative). We'll look into growing some red cabbage in the future.

@@FarmSteady Haven't tried it yet , I was using light weight garden fabric to cover them , and those littel green A****** worms still got in , My friend grew red cabage outdoors and No worms at all , we used here to make 3 gallons of Kraut with Carawy seeds ! it taste great ! @@louisbartels3845 Mesh with a little frame works wonders. Certainly beat our method of waking up early every morning to methodically hunt for caterpillars--although that eventually worked. But pretty labor intensive!
