Today I brought you into the kitchen to make some homemade bread from freshly milled grains. Grinding wheat is not a hard thing to do, and while I made the bread, I answered many of the questions I have been receiving.

Constance, thank you for making a video easy enough for a 66 year old man to follow, my late wife was the head cook and baker in our house while I was the cleanup crew, this worked great for 47 years and now I’ve been thrown to the lions as I have no cooking or baking skills, I knew from day one that I needed real food to nourish my mind and body so I began to read and watch videos and this is where I learned the health benefits of wheat berries which I have made soups and salads out of but was afraid to try baking with it up until I watched your video and trust me I watched several before stumbling upon yours, you gave me the confidence to order a wondermill and a Bosch mixer and now I am awaiting a few more supplies to show up so I can bake my first loaf of bread ever. @@CosmopolitanCornbread well I did it, first let me explain the flop, I printed off a bread recipe before I came across yours and in my excitement I grabbed it by accident and I new something was wrong as I started the process, way to much flour and to many steps but I continued and completed the bread, the son and his family enjoyed it but weren’t found of the crust, today I made your recipe and asked for their reviews, the son and his mother in law both like the taste and texture better and said the crust was much softer and palatable than the last batch than came the review from my 8 year old grandson who holds nothing back, well he gave it a 10 yeah! My adult daughter loved it and said she was going to hide it from her family which I replied no worries this recipe is so easy I can make it anytime you want. I gave my WonderMill mixer to a family that has 9 children. I always dreamed of having a Bosch mixer but I chose the WonderMill instead. I realized after trying to mix my bread recipe that it was too big so I gave it to someone who would be able to take advantage of a big machine.

I just wanted to let you know that I am very much aware of BREAD BECKERS. I am fortunate to live about 20 minutes away from Woodstock. I was introduced to them about 25 years ago. My how time flies. In the beginning I had a friend grind my wheat. Since then I have gathered more appliances. My family is grown so consumption has been reduced. I still get together with like minded friends monthly to continue this tradition. I am very blessed to have become part of this growing group. Thank you for all your skills and advice moving forward. I was just thinking yesterday how I really wish they had a drop here in NWA. Thankfully we have Azure Standard, so I can get bulk organics through them. It was just nice being able to get them in the buckets :)

You're baking your bread at too low of a temperature, that's why they're not browning up as nice if you do it at 375 for 30 minutes your loaves will rise a lot better and they'll be browned up darker and nicer. and since you're kneeding the dough in the machine you don't need to do two rises as soon as you take the dough out form it into loaves and put it in your bread pans and then turn your oven to 170F turn it off put the loaves in for half an hour they'll rise beautifully leave them in the oven and set your oven to 375, as soon as it hits 375 put the timer on for 30 minutes and you'll have beautiful high loaves.

I love your presentation! Today is the day I unbox my NutriMill and make some *real* bread. Another option for wheat berries is Azure Standard. They have drops all over the country, about once a month. Thanks for the instruction, the confidence boost, and the recipe! And a huge thank you for your service to our nation. My hub did about 30 years. It is NOT an easy life. We settled in TN after all those PCS moves :)

Hi Constance! I do mill my wheat and love it. I am searching for a recipe for zucchini bread using milled wheat. I searched your page but didn’t see one. I just made some using the soft white but it came out dry. Tastes good just dry. Thank you

I freaking **LOVE** my Bosch! It's a workhorse. It makes homemade bread soooo easy. I love the flavor of half red/white wheat. Just bought some rye flour from the Amish store in Pulaski. I can't wait to try it! Toying with taking a corned beef from the freezer and turn it into pastrami for the rye bread. Yum!

I've watched a lot of videos and I'm choosing your recipe to try I inherited the same mixer. But now I'm looking for a good cornbread recipe made from milled corn. I like your bread recipe because it doesn't contain additives that I don't like, like sugar and bought flour. Lots of recipes are always adding bought flour. My dad used to make homemade bread like this but he is gone now. I inherited his mill and mixer

I purchased my Nutrimill from Pleasant Hill and got it this week. But i just need to buy the grain. I also have the Bosch Univ. Plus Mixer. My hubby bought it for my birthday 3or4 years ago and i don't want to say "love" but I really like it. Thank for this video as I'm still learning the milling

Hello May I ask you if you have a vintage Bosch mixer, because I just got a used vintage Bosch but my question is if every time you finish using it do you have to unscrew the bottom of the bowl to remove the center piece of the bowl to be able to clean it thoroughly? Thank you

@@speakingtruth9634 No. I had a person who sold them explain not to get the metal parts wet. Just clean very carefully, not getting water down the shaft. DO NOT IMERSE IN WATER! My husband would take it to the garage and clean and grease it and now my son in law takes care of me. It is a powerful machine! I did get a new bowl this summer and love it!

Hi- I love that mixer!! I’ve been using my KitchenAid with great results (so far, knock wood), but this mixer! Takes it to the next level. I did a dumb thing last sat. Here, in CA. We are into the triple digits heat-wise. I’ve been turning on the AC in the afternoon for a bit. I made two loaves of sourdough sandwich bread-first time ever-no rise! What? Lol. If I only had a brain! The AC was keeping it too cool. From now on, in the oven they go to rise. I took them out, covered to the garage and was able to salvage them. 🤦🏻‍♀️ My son sent me 25 lbs of organic stone ground when all the COVID business started. I’ve been using the mill attachment for my Vita-Mix and so far, so good. Again, your mill is very tempting tho! I saved this video so I can get to your recipe here. I want to give it a try. As always, thanks for the great info/advice! 😊

Loved your video. Haven’t bought a mill yet, been using a little Braun coffee grinder, slow but it works. My Kitchen Aid did well for many years (I got good at replacing gears), but now that I’ve graduated to grinding and using whole wheat for my dough making, the Ankarsrum mixer that my wife and daughter bought for me last Christmas far exceeds the Kitchen Aid for ability to mix large amounts of dough. It’s a learning process though. Helpful video.

You can buy "feed wheat" from the feed store, and it is cheap. The way I feel about is that it must be wholesome if they feed it to dairy cattle. Do as you see fit. I would eat it.

Just picked up some Hard Red Spring Wheat berries in 50# bag $20.95 and also King Arthur Flour Artisan Flour $29.95 from a Amish store we buy from. Also got large zip lock plastic bags that fit home made breads for 15 cents apiece, got 10 of them to add to the one I got earlier in the year. I’ve never used hard red wheat berries before so we will see. I’ll add it to one of the other kinds of berries I have! Love your videos and I want a Boush dough mixer someday. Hugs to you🤗

I have never used hard red, but have read that it has a nuttier, stronger wheat flavor.

@@CosmopolitanCornbread You can use 1 cup red wheat berries and three cups of white wheat berries. The red berries will give the bread a delicious flavor. I find that all white berries do not have enough flavor for bread. I love Pleasant Hill Grain. Been doing business with them for years. I own an Ankarsrum Mixer and a Ko Mo Classic Fidibus XL Grinder. They do a fantastic job. I live in Georgia so I am fortunate to be able to go directly to Bread Beckers Store although it is a good two hour drive fro my house. Sue Becker has written a book on Home Milling that is excellent.

Just ordered a cheap hand cranked mill online for grains for brewing but like baking too so I've been watching a lot of videos like this. I've read that doing multiple passes through the mill can give you a finer flour, have you tried that and what was your results if you have? I'm also curious what the eggs do in your bread recipe?

Hey Constance This is Cool I just started Milling too..almost 2 weeks ago Just learning as Just me and mu Older son we do Not need alot of breads But muffins..sweets pancakes ect..next month I think I want to do a tot press where you make burriotes and..Next week gonna try Pizza as a Favorite of His and maybe in March Learn how to make pasta as well,..I think just these changes can effect our overall health..Patricia..that and I am starting to drink raw goat milk too and taking sea moss

a catch 22 if you will I really need to get the excess sugar out I am 63 and I know the sugar causes inflamation in my body and a few knots in my fingers so even thou the bread is healthy and deserts I am trying to not make that an excuse to eat more and just use it for when I do eat bread and be less..gonna make homemade kamut cream of wheat this morning and save my eggs for lunch..It is just basically me cooking for myself so it can be haard making better food choiced and less commercial instant meals@@CosmopolitanCornbread

I’m new to baking bread but I am very happy with the results so far and my family loves the breads I’m making I currently use bobs red mill organic flours I use their AP, whole wheat, bread and rye flours I never add more than 20% of the WW or rye flour to my dough. I don’t like the overpowering flavor of WW flour. Here’s my question if I get a flour mill will I be able to make flour similar to the bread flour from bobs red mill. I just don’t want to able to only make WW as I don’t need that much WW flour. I thought I saw somewhere that you need to run the flour through screens to make a flour similar to bread flour but I am not sure.

That is correct, if you mill your own wheat, it will have very coarse bits that take a bit of getting used to. If you want a WW flour that is fine like store bought, you would have to filter it.

Still waiting to get my hard white wheat. Was wondering if in the meantime I could use soft white wheat and a combination of hard red wheat. Just got my new Nutrimill, so excited to use it. Thank you For the video

Since , I only had soft white and hard red, I made that combination and had to throw away the bread. Soft white is not for bread, I knew it but try to experiment. It didn’t work for me, but I am new in making bread so, if it get to work for you, let me know. I had to patiently wait for my hard white. Blessings

Love the Honey Wheat bread recipe. My question is if I only need to bake one loaf at a time, since it's just for me and my wife can I just divide all the ingredients by 4?

It would be hard to divide the eggs. I would just do 2 loaves (cut it in half) and freeze the extra loaf.

I’ve been baking bread with store brought flour for about 10 years. Recently I brought a mill and have made my first lot of home milled bread. The results are always a bit sticky when the bread is cooked . I use 600 g white bread flour and 300 g fresh ground grains and 700 g water. Have you ever encountered this problem .

Does your mill have settings on texture from coarse to fine? It seems if you set it on fine, you wouldn’t have to adjust to fresh ground.

Yes, it does. But even ground as finely as possible, it is not the same as store bought flour. Store bought flour has a lot things sifted out of the wheat - bran and other great things that are still there for freshly ground.

Love that I just came across this video randomly. Very informative for someone looking to start milling their own flour and being a bit more sustainable. Do you have any recommendations on a type of grain to use for gluten-free loaves? We have a GF member in our family and it would be easier to keep it all GF and not having to separate things for them going forward. Thanks for your time!

Thank you. I'm afraid I don't have any experience milling gf grains. I have baked with quite a few alternative flours but none that I have milled.

You may have to go to other types of flour, such as Almond, because all wheat berry types have gluten.

Hi, Although I am not gluten intolerant, I chose back in 2015 to remove it from my diet, so that I could regrow my own cartilage in my body, which I did very successfully I may add. Anyway, it seems to be {not 100%} that if you are using an original wheat grain, one that has never been contaminated with pesticides etc, that the gluten doesn’t actually cause same harm to the body. I personally now purchase a local grown wheat grain, that has not been genetically modified, and am about to mill my own, to make my own bread, pancakes, etc, however I shall say that making your own bread with a mixture of buckwheat {groats mill your own} using also your own almond flour, and maybe Yucca flour, or other grains, maybe you will find a better recipe. As I live in Europe, on Thursday I shall be joining a live class, for baking gluten free bread, without using potato starch, or rice flour, or all the types of HIGHLY PROCESSED ingredients companies use to make the most dry, disgusting gluten free bread and rolls ever tasted. @@hehay10 Hi, not sure if you are asking for help with gluten free recipes, or just what have I personally made with gluten free flours. I try to adapt certain recipes, because I love to cook and bake, however it’s not so easy to to just change a wheat flour for gluten free flours, not all recipes work that way, however I do try hard to keep away from starches, which of course are highly processed. Anyway I will say to check out Nicole Hunn for her amazing gluten free recipes, and as I said before, I am not coeliac so when I realised that using an original grain, that had not been genetically modified, would actually not cause the issues that genetically modified wheat will. Can you use instant yeast or does it have to be the regular yeast? I made my first loaf a couple of weeks ago and wasn’t happy with the result. I used instant yeast and mixed it in the bread maker. That probably wasn’t the best choice.

hard white is exactly what I use. If you are milling your own wheat, it has all the fiber, oils, and all the benefits.

If you are using wheat berries for an all-purpose flour, you would want to use the "soft" white wheat. That will give you the best results. The "hard" wheats have the higher gluten for breads, like bread flour.

So I just learned of wheat berries. For reasons I got some to have on hand. My questions is for milling them. Would a barley mill used for beer making do the trick? Im assuming it would I just havent heard anyone on these discussion groups mention them. Thanks!

I have no experience with a barley mill, but if you test some and it comes out fine like flour, I would imagine it would work. Not super helpful, but that's my thoughts :)

I see that this recipe calls for 4x9 pans. As of now I only have 9.23x5.25. Could I use the bigger pans and, if so, would I need to increase the amount of dough for the pans?

@@MattyMattnj1 Thank you for mentioning it causes inflammation. This saved me a trip to the hospital! I won't be buying Emmer flour & I did have it on my to buy list. Not anymore. I did get some milled Einkorn flour from Jovial & I bought some Soyghum flour. pray it will will come out well. I like to mix 2 to 4 different flours to my bread & I like to add sprouted seeds to my bread for extra nutritional benefits, as well as a nice crunch. I pray you don't have anymore inflammation problems with the flours you are using now. Are there any orher flours that I should avoid? Thank youvso much gor commenting❣🙋‍♀️

I keep ending up with sticky dough! I tried many techniques, including the ones you recommended. I use a kitchenaid mixer, and even after several minutes its still sticking to the sides and doesnt roll out correctly. Any help would be greatly appreciated 😅 Every other step seems great, no problems with rising. It must be the gluten not forming.

I used bread becker recipe and hard white wheat. My bread is "gritty" I guess that is the fresh ground texture. I do NOT use bread machine and I knead it by hand. My bread does not rise. What might I be doing wrong?

Freshly milled flour does have a different texture than store bought. I have not used their recipe, so I can't give any tips. Though sometimes freshly milled wheat can take longer to rise.

also the reason your loaves are so small is because you're not using enough dough that recipe should have been for two loaves only not four try it and you'll see if you make two loaves you'll get nice five inch high loaves like I get my loaves are about two two and a half pounds of dough, if you go to healthy kitchens and look at the way Carol makes bread she gets huge high beautiful loaves you can look up the recipes on her website. one of the best bakers I know.

My favorite yeast is the InstaFerm yeast from BreadBeckers.com, however I have used just about any yeast out there. I find that the yeast doesn't make too much of a difference, other than how quickly the bread dough rises :)

You can often substitute it. But all-purpose flour generally comes from soft white wheat, which has a lower protein level. You may need to adjust the flour - maybe add a little more of the fresh, to get the right consistency. It will vary depending upon the recipe/flour :)

I am NOT an expert on pasta making. I have only done it a couple times in my life - and not successfully. That said, my understanding is that semolina flour is the ideal flour to use. But really, don't take my advice on pasta ;)
