This recipe is so GOOD! Just made it for a second time tonight. Its fresh, flavorful and just the perfect summer meal. I skipped the rice noodles and and just went salad and meat. Delicious. I will be making this again and again.

I am Vietnamese and I am living in Hanoi Capital so this dish " Bún Chả" is so popular. It is served with dipping sauce made from lemon, chilli, sugar, garlic, fresh water.....It is so delicious.❤

Look authentic to me, a Vietnamese bun cha lover. But for the record tho, for that amount of nước chấm I would use like 20 chilies not just 1. I like them red, lmao.

Your recipe for the nước chấm is very accurate. The chả really needs some lemongrass paste to be authentic, perhaps two tablespoons for the whole batch. Make sure it is a paste, otherwise it will be too fibrous. Process it with a mortar and pestle like you did with the Thai chilies.

authenticity is hard to pin down. essentially authentic means differently in different regions. just look at barbeque. :) we don't do lemongrass for this sauce in our household from Hue, VN

I live in Hanoi, have tasted the quintessential dishes of the North since I was a child and have never put lemongrass in bun cha or considered it the main food, so lucky. The noodle dish you recommend is probably from the South - Grilled pork vermicelli - Bun thit nuong. If you love Thailand, create your own with Thai spices, or at least name the dish properly. It's not okay when you get caught up in a very vague or even unrelated relationship.

The only nit picky thing I would say is I like it better when everyone gets an individual bowl of fish sauce w/meat in it and you can dip the noodles and vegetables in it from the communal plate - much more slurpy. Also, my mom always taught me to serve the herbs whole and let everyone rip as they’re eating. If you pre rip them, they lose their fragrance, and oxidize/turn black. One exception is I’ll pre rip cilantro to take it down a notch. I’m not the hugest fan of it, but I know it needs to be in the mix to taste right.

In Vietnam, it has a soup. The soup is the best part. I hope there's a tutorial also on how to make its soup. Bun cha is my favorite food in Vietnam. ❤️ Btw, thanks for this video.

I would say at least 85% lean for the ground pork because the patties can get dry. I personally use 80% lean 20% fat.

I would serve a crisp IPA. Not one of hte really strong west coast ones, more like Sam Adams 60 minute. I think a light farmhouse ale would be really nice, or a California common such as Anchor Steam.

At ATK they usually add baking soda to raise the pH of the meat, which encourages browning (the Maillard reaction).

The ATK recipe for the meat pattie seasoning is very basic, no soul to the dish. For Bun Cha pattie seasoning it needs more ump to the meat: missing is the Oyster sauce, sesame oil, lemon grass, and some call for Maggi Soy sauce.

I can tell you fish sauce and soy sauce taste completely different from each other even though both a salty. I don't think that sub would work. Definitely need the fish sauce.

It will not be the same! Fish sauce might stink to high heaven, but it's truly an amazing ingredient with a totally unique addition to dishes. One bottle is fairly cheap, and lasts for quite a long time.

Unfortunately the flavor profile would be totally different. Fish Sauce adds a particular umami flavor to the sauce. Made from fermented and salted anchovies, the mouth feel is more pungent. Soy sauce is fermented soy bean. It hits the umami taste buds on a similar level, but the profile is 100% different

Brian, my understanding of your comment is that people should only learn about Asian food from people who are descendants from that continent or that ATK needs to be more diverse. I agree that we can learn from each other about other cultures, but if it were not for shows like this some people would not learn about the diverse food because of where they live. I can count on my one hand how many Vietnamese restaurants are in my area and I know that this dish is not served there so I would not know about this dish without ATK. What are your thoughts on how food should be shared with others?

Most of the restaurants I would go to in Seattle used vinegar instead of lime juice, but they'd tell you they use lime juice at home. This is one of my favorite dishes, but I prefer the grilled chicken.
