It's Kinkan season.
Kinkan is Japanese for Kumquat.
Native to China the Kinkan found its way to Japan during the late Edo era. Rich in vitamin C and with an edible peel, kinkan can be eaten whole or deseeded and prepared in various ways.
In this recipe, we are making candied peels which may be enjoyed as is or added to scones or cookies for a real treat.
Kinkan is also said to good for your throat and is often found as a main ingredient in cough drops or throat lozenges in Japan.
