Celtuce also called stem lettuce or chinese lettuce is a cultivar of lettuce grown primarily for its thick stems or its leaves. It is used as a vegetable and especially popular in China and Taiwan where stems and leaves are prepared separately.
The green leaves are tender and are best stir fried. The stems are usually pickled and can be grilled or roasted. It is mild but nutty with a slight smoky taste. It is also high in vitamins.
I remembered when we were young in our childhood and fell sick maybe with fever or sore throat, my mom would boiled rice porridge and we would eat with canned pickled lettuce. We seemed to recovered so much faster and never seen any doctors before.
