Renowned pastry chef Natasha Pickowicz from Flora Bar and Cafe Altro Paradiso in NYC stopped by the MUNCHIES test kitchen to make this layered carrot cake.
Flaky coconut and sweet pineapple jam give this oil-based cake a tropical twist and ensure the layers stay super moist even after it’s been kept in the fridge for a few days. Natasha also shows us how to make the perfect cream cheese frosting and begrudgingly explores the pros and cons of hand mixers…which Farideh forced her to use.

This is by far the best carrot cake recipe I have ever tried. A few things I did was add 1/4 tsp of nutmeg and 1/2 tsp of cinnamon. I also added vanilla bean paste to the frosting. This recipe is not too sweet, has very balanced flavors, and is so tender and moist. Seriously such a godsend. PSA. don't skip out on the luxardo cherries its worth it and if you live in NYC and can get ben's cream cheese even better

For me, the beauty of the carrot cake is amplified by the spices! Cinnamon, nutmeg, ground cloves...some people even use ginger. (I also make my own brown sugar on the fly with sugar and molasses.)This cake was nice but lacked a wow factor. The Chef was a fantastic and knowledgeable presenter! 💗🌷🥕

The whole baking sheet tray method was iconized by Christina Tosi at Milk Bar in NY. It was a quick way of producing cake that could be easily punched out with a cake ring to layer cakes. They would then use the scraps to make cake balls that would also be layered into and on top of the cake. So not wasteful at all.
