How to Make Cauliflower Rice

This is a great substitution for a side to cut back on carbs and incorporate more vegetables in the diet!
Ingredients:
1 Head Cauliflower, coarsely chopped
2 T. Olive Oil
1/2 t. Salt
Directions:
1. Cut the florets off the head of the cauliflower. Place in a strainer and rinse under cold water.
2. Place in a food processor and pulse for about 15-20 seconds or until the cauliflower resembles a rice-like texture.
3. Transfer to a microwave-safe bowl and add 1/2 t. salt and drizzle with 2 T. olive oil. Cover with plastic wrap and cook for 3 minutes.
4. When finished, carefully remove plastic wrap, and mix. You can add in herbs and vegetables to flavor the "rice" to your liking.
