Cheesy Chive Scones | Fluffy, Flaky Perfection

Indulge in the irresistible combination of cheddar and chives in these light and airy scones. These scones are a delightful treat, perfect for a leisurely breakfast or a delightful afternoon tea. With their crispy exterior and tender, cheesy interior, they're sure to become a family favourite.
Ingredients:
500g self-raising flour
10g salt
100g unsalted butter, cold and cubed
350ml milk
10g finely chopped chives
30g finely chopped red capsicum
100g shredded cheddar cheese
50g grated Parmesan cheese
Method:
1.Prep the oven: Preheat your oven to 220°C (200°C fan forced). Line a baking tray with baking paper.
2.Combine dry ingredients: In a large bowl, whisk together the flour and salt.
3.Rub in the butter: Using your fingertips, rub the cold butter into the flour mixture until it resembles fine breadcrumbs.
4.Create the dough: Stir in the milk, chives, capsicum, cheddar, and Parmesan until just combined. Be careful not to overmix.
5.Shape and bake: Turn the dough out onto a lightly floured surface and gently pat it into a 3cm thick circle. Use a 5cm cookie cutter to cut out scones. Place them on the prepared baking tray.
6.Bake to perfection: Bake for 12-15 minutes, or until golden brown and risen. Serve warm with butter or jam.
Notes:
For a richer flavour, use double cream instead of milk.
Experiment with different herbs and cheeses to create your own unique scones.
To add a bit of spice, include a pinch of cayenne pepper or red pepper flakes.
For extra flavour, add 80g finely chopped bacon, ½ teaspoon white pepper, and ¼ teaspoon nutmeg to the dough.
These scones are best eaten fresh, but can be stored in an airtight container for a day or two.
Serve warm with butter, jam, or cream cheese for an indulgent treat.

I just wish the wonderful English bakers would help with the measurements in the non metric system.i know, we in America did this to ourselves, haha, but I know u are about to Garner a lot of viewers from the States, so please please help us with the conversion as u cook. Thanks. New subscriber.

Thank you for the positive comments. I used to display 3 types of measurements when I passed on my recipes around the world. Most professional bakers and pastry chef today, trust the metric system to be perfect, for especially baking bread and cakes. I know there are many American cooking and baking shows which only uses metric these days. There is plenty of apps on the internet to convert grams into oz or spoons. However, I am putting other measurements on some recipe. Thank you for subscribing.😊😋

What exactly is capsicum? I know it is some kind of pepper. I thought it was similar to ground cayenne but your scones look like they have flakes of pepper.

Capsicum is called Bell Peppers in some countries. You can add extra chili or peppers if you like the additional heat, however I didn't add any. What you might see could be the cheese.😊😋

I am using self raising flour in my scones recipes. To make your own self raising flour mix 475 gram all purpose flour with 25 gram baking powder.😋😊
