I went to the shop for clams today. 20 dollars for a bag! This is a very expensive soup, Chef!

Want to make a crab chowder sometime! oh yes and try cooking the clams in with some type of broth unless it would make it too Seafood-ey tasting!? I don't know I haven't tried it like that but yes definitely cook from the bases like the spices and stuff in with the onions Etc too some gal poured the cooked clam water through a cloth strainer. I just love the taste and texture of canned milk in with it. Progresso has really good creamy clam chowder and I'll mix that in with homemade too is very good. I like to use garlic chunks also garlic paste in with the soup and also some chop green onions top with lemon juice enough pepperdust, coarse sea salt and croutons

Will try to make this ..this a different version of clam chowder some make it without the flour , I notice the clams are smaller but its still looks great !

Chef Eric Arrouzé, I own 2 awesome electric pressure cookers and love clam chowder soup. I want to experiment and make another soup (first one((stove-top)) was gross, very floury) so I was thinking about cooking all the ingredients except clams and dairy together. I think the clam juice and vegetables would infuse the potatoes nicely. Would I be able to substitute the flour with Arrowroot? Also, If I cheat and use canned clams, would I or anyone really notice a flavor change verses using fresh in a soup? Thank you Chef!

i would reduce the clam/fish juices without adding the milk product. after it's all reduced to where you want it add the milk at the end and just simmer at low temp for 15 min maybe. you really don't want to overheat the milk which will ruin it.

boil fish heads, tails and fins. If you want you could add a little onion and spices of your taste, such as: garlic, chilis, celery, pepper, ginger, etc.

Dont use cornstarch. Because it will solidify when cooled , you will need to add more stock and heat up again the dish to make it runny again.. there seems to be a bitter aftertaste when using cornstarch as thickener when reheated ,

does anyone know? can you add this concoction to a primed hot thermos and then have it for lunch? or will being in a hot thermos, over cook the clams?

@@online-culinary-school in addition to the roux type thing you did, do you think if i need to thicken it, will pureeing some of the mash potatoes and adding it back in make for a nice texture? ty for the earlier response.

i heard that when the clams won't open they may be bad so should be discarded, you instead just boil them longer.

You happy with the discipline of the recipe. But it doesn't seem like there is enough clams. Maybe it's the effect of clams into soup. Is what you are looking for in your recipe. I'm very happy with your recipe though I'm going to use it to each his own. Don't want to offend anyone my apologies if needed

he screwed up method. you want to reduce the clam juices simmering but WITHOUT adding the milk. the milk gets added last 5 min maybe with super low simmer. boiling milk ruins basically
