How to Make Crispy Cauliflower Chimichurri Tacos

Great for Taco Tuesday, a Vegan/Vegetarian or Meatless Monday!! Yummy! The perfect mix of spices!
Ingredients:
Cauliflower:
1 medium or large head cauliflower,
stem removed & chopped into bite-sized pieces
1 T. vegetable oil
1 t. cumin and chili powder
1/2 t. smoked paprika
Crushed red pepper flakes
Almond Chimichurri:
½ c. salted roasted almonds
2 cloves garlic, minced
½ t. salt
¼ t. ground pepper
1 c. tightly packed, fresh parsley
1 T. fresh lemon juice
2 T. red wine vinegar + olive oil
2-4 T. water
Tacos & Slaw:
3 c. shredded cabbage mix
1 c. cooked lentils or black beans
¾ c. packed, fresh cilantro
1 T. fresh lime juice
salt and pepper to taste
8 6-inch flour or corn tortillas
Directions:
1. Preheat oven to 400 degrees and line a baking sheet with parchment or oil. Toss the cauliflower with the oil, cumin, chili, smoked paprika, and crushed red pepper flakes to taste. Spread the cauliflower on the baking sheet and sprinkle generously with coarse salt. Roast for 30-40 minutes, stirring once halfway through, until the cauliflower is getting crispy and brown on the edges.
2. While the cauliflower roasts, place the almonds, garlic, salt and pepper in the food processor and process until the almonds are a coarse meal. Add the cilantro, parsley, lemon, red wine vinegar, olive oil, and 2 T. of water. Process until the mixture is evenly mixed, resembling a pesto. If it is too thick, thin it out with the remaining 1-2 extra tablespoons of water.
3. In a mixing bowl, toss together the cabbage, lentils or beans, cilantro, olive oil and lime juice. Season with salt, pepper, oil or lime juice.
** You can toast the tortillas over an open gas burner set to a very low flame for about 1 minute per side. You can also reduce the oven temperature to 300 degrees after roasting the cauliflower, wrap the tortillas in foil and warm them up for about 10 minutes. **
How to Assemble the Tacos:
Fill all of the tacos with about ½ cup (each) of slaw and cauliflower, then drizzle with the chimichurri sauce.Adapted from www.thefullhelping.com
