How to make croissants :Easy croissant recipe / Butter croissant recipe

These croissants are simply amazing.Crispy on the outside Buttery Flakey with a nice golden color..I's a perfect treat for brunch or breakfast.
Here in this video you will see how to make croissants in an easy method.
Croissants are made of a layered yeast leavened dough.traditionally,the dough is layered with butter,rolled and folded several times in succession and then again rolled into a sheet.
But in this recipe,we are going to make these wonderful croissants a different method which is more easy,which takes very little time and effort than the traditional method.
There is no special equipment or hard to find ingredient required.So let's see how to make these wonderful croissants in three simple steps.

Ingredients
Flour :400 gms
Milk:260 ml
Butter:180-200 gms
Sugar 4 Tbsp/60 gms
Salt :1/4 Tsp
Active Dry Yeast:1 Tsp
For egg wash:Beat 1 egg+1 tsp milk
Method
We can make this easy croissants in three simple steps.
STEP 1
Prepare the pastry sheet.
STEP 2
Proof them.
STEP 3
Bake them.
Let's prepare the pastry sheet;For that,we need to
(1)Prepare the dough
Activate the dry yeast by dissolving 260 ml warm milk ,4 Tbsp sugar and 1 tsp active dry yeast.
Add 1/4 Tsp Salt into 400 gms of flour.
Blend together the wet and the dry ingredients until we get a homogenous evenly hydrated dough.
(2)First Proofing
Let the dough sit and rise for 1 1/2 to 2 hours or until the dough get doubled in size.
Degas the dough and divide the dough into 12 equal pieces.
Roll each piece of dough into the shape of a disc which is approximately 16-18 cm in diameter and not more than 2 mm in thickness.
(3)Layer butter on each disc.
Place the disc on a plastic film and repeat the same process for the next piece and stack them over the previous disc and continue the same with rest of the divided dough pieces.
As butter is very soft now, we need to freeze them for 30- 35 minutes;so that the butter will not be very soft and will be pliable and it will be easy for us to work with the dough.
Roll them into long rectangular sheet.
With the help of a knife or a pizza cutter,cut them into smaller triangles.
Shape them into croissants
Step 2
Give an egg wash.
Proof the shaped croissants for 2 hours until they puff up a little.
Step 3
Give another egg wash and Bake it at 400 F for 10 minutes and then reduce the temperature to 375 F and bake for another 8-12 minutes.
After baking we will get a beautifully caramelized golden brown,flakey,buttery,delicious croissants.
Now we can make bakery style croissants in a more easy way,without compromising our health.. we can get rid of those preservatives and those trans -fat that are used in store bough croissants.

I made this 6/17/21 These were the best!!! Soft, Flaky, Tasty. Thank you for the recipe. The video directions were very good. I started the dough, when it was time to put it in the freezer, I left it for 1 or two days. I took the dough out the freezer and left at room temp for 1 to 1 1/2 hours then placed in the fridge to finish defrosting. I rolled the dough to make sandwich size croissants (8 to10) and followed the remaining directions. They came out nice and big and soft. and tasty.

At first I was wondering why you divided the dough before adding the butter, but then I realized it makes total sense. You save a lot of time by not having to chill the dough after every fold. Will try asap :) thank you!

This recipe is pure genius ❣ I love that you added chocolate to the rolled up croissant dough. I'm looking forward to making these as soon as I'm able. At present I'm in a juice fast today is day 25. My last juice fast was 40 days & nights, I do them for health reasons. Update: omg. They turned out amazing. For those living in a warm climate, don't mess too much with the dough after the freezer stage or else you will have melted butter oozing from all directions. Work quickly! Also at the disc stage I did the layering directly in the freezer, as my kitchen is quite warm. Thank you Bincy!

Amazing! I was never motivated to try croissants by myself because the recipes were always complicated and confused. After watching your video I want to try it!! Where did you learn all these techniques? We can see it’s not just regular recipes, you really know what you are doing :)

Usually we replicate the method that is used in large scale bakery production units (which is actually very difficult to do at home,while handling very small amount ). I am passionate about baking; so i love watching videos, reading books and learning from hands on experiments :)

I really like the technique of lamination you used for this recipe. Should give this a try! I normally prepare them with classic 3 folds / turns recipe followed by chilling of the dough at each step. Your method should cut down the time so much but it also has less number of layers and that is why I am intrigued to see if the texture / crumb turns out like it does in other classical croissant recipes.

Thanks Bincy for the amazing recipe. May I know if we can use jam or sweet coconut or any other stuff inside the croissant instead of chocolate?? Though I am very new to baking, I tried your burger bun, cinnamon roll and hot cross bun and everyone in my family loved it. Thanks a lot.

Hi Neelakshi,Yes you can use sweet coconut, custard cream, cheese etc.I am not sure about jam as there is chance for leaking. I am so happy to hear you made many of our recipes and your family enjoyed.

Hi shane Kaiser,Mix the dough and form into the layered disc shape so it's easier to roll out later. Wrap it tightly in plastic wrap and store in an air-tight container or re-sealable plastic bag in the freezer for up to 2 weeks. If you store it any longer, the dough may begin to lose its flavour.

Hi there so I’ve made it and I’m on the 2nd proofing is it okay to refrigerate or leave them in room tempt and bake them the next morning?

Hi Rohana,from your comment, I understand that you shaped the croissants and you want to make them tomorrow..so I would suggest you to keep the croissants in the refrigerator before second proofing.Tomorrow,You can take them out and bring it to room temperature and then wait for them to puff up (second proofing) and then bake.Please don’t leave it at room temperature,as it will get overproofed . Hope you are clear.please let me know how it turned out for you. I usually keep the croissants sheets frozen. so that we can bake them in small or big batches at any time.. All the best for making wonderful croissants

Yes you need to ..and it is a very important step to get light and airy croissants. Bake And wait for until they are crispy (you may or may not require 2 more minutes of baking...)Keep an eye on them in the last few minutes of baking.All the best for making wonderful croissants.

I am impressed with the simpliest method ever! I hv seen many methods which the pastries are rolled out, measured n folded into rectangular shapes, several times etc.. Can I use instant yeast instead of active dry yeast? Thank u so much for sharing.

Hi, I liked your recipe, you make it seem so easy. Can I use fresh yeast instead of dry? In my experience, it's much better than dry yeast, the dough rises better and faster. How much would you use in grams? Thank you

Glad that you found the recipe easy.You can use fresh yeast.If you are using fresh yeast,as fresh yeast has moisture in it, you should use 3 times the fresh yeast in weight for the same rising ability of instant yeast and 2.5 times the amount of active dry yeast.So i recommend using 10.5 gms of fresh yeast(1 tsp dry yeast =3.5 gms).Hope this helps
