Nyonya curry is a type of Malaysian cuisine created by the "Peranakan" or "Straits-born Chinese" - culture and tradition dating back to the early 15th century until the late 19th century. In a Nyonya curry, it is essential that the curry sauce is made from scratch in the kitchen using either coconut milk (for a rich and creamy curry sauce) or tamarind juice (for a sourish curry sauce) to create the sauce or gravy. In this recipe, we will be using coconut milk to create the curry sauce for an authentic Nyonya curry vegetable, which is a type of Malaysian vegetable curry. This vegetable curry is rich and creamy with a distinctive flavour and taste from the toasted belachan.
