In this video, I will show you how to make your own curry sauce with coconut milk. I will start by showing you how to prepare and toast a Malaysian shrimp paste called "belachan". Nyonya curry is a type of Malaysian cuisine created by the "Peranakan" or "Straits-born Chinese" - culture and tradition dating back to the early 15th century until the late 19th century. In a Nyonya curry, it is essential that the curry sauce is made from scratch in the kitchen using either coconut milk (for a rich and creamy curry sauce) or tamarind juice (for a sourish curry sauce) to create the sauce or gravy. In this recipe, we will be using coconut milk to create the curry sauce for an authentic Nyonya curry vegetable, which is a type of Malaysian vegetable curry. This vegetable curry is rich and creamy with a distinctive flavour and taste from the toasted belachan.

Yummy thank you...the thought of frying the blachan phew the smell. I might risk toasting on a Disposable BBQ, I will wait to do it in the autumn when the flies are not around ha ha ha And make some Sambal blachan...I made this years ago, my daughter calls it pong

being Vietnamese, I always have a jar of shrimp paste in the fridge. it doesnt come in a block like that though, its more of a thick paste. Could i use that and toast that instead?

Hi @thi nguyen..,no I wouldn’t toast it. You can use it as a paste. You can find Malaysian belachan at the bigger Woolworths.
