Watch this video to learn how to make your next batch of jerky using a pellet smoker! This same process applies to any kind of jerky so use this as your go to reference for how to make jerky! The key to making jerky is in the process. Today, the Bearded Butchers show you their jerky making process. First, they cut up the rounds, next they cut the meat into strips, then they season the meat with Bearded Butcher Blend seasoning and leave it in the fridge overnight for maximum flavor. Once the meat is ready, it's onto the pellet smoker grill to be finished with that delicious pellet grill smoke flavor. Delicious!

Index:
1:42 - Seth begins to break down the deer carcass. He starts by removing the deer tenderloin
2:30 - Removing the deer hindquarters. Not saving deer round steaks in this case, the rounds will be used for the deer jerky.
3:46 - Using the Victorinox 6 inch semi-stiff knife to start cutting up the round.
4:30 - Removing the femur bone from the deer rounds. Ending up with the top round, the eye of round, and the round tip or the sirloin tip. Left with the bottom round and sirloin tip.
9:46 - Next up, cutting the deer jerky into strips. Be sure to cut against the grain so the jerky pulls apart easier. Pro tip - be sure to cut all of your strips the same thickness or they will be more difficult to smoke.
13:33 - You don't need a jerky seasoning recipe, instead just add 1 tbsp of Bearded Butcher Blend seasoning for every 1 lb of meat (link above)
15:14 - Seth gets the deer meat out of the fridge and gets it ready to be smoked. The deer meat will go on the pellet grill for 2 hours at 165, then up to 185 to an internal temp of 165.
17:42 - The deer meat goes onto the peller grill to finish the jerky making process.

Grats little dude......BUT I want to commend the parents for teaching their kids the RIGHT things about life like hunting and gun safety. This just proves that guns and hunting can be a very good, family bonding and rewarding experience and not every person who has a gun is going to do some awful despicable act. More experiences like these you shared and people would grow with more respect for guns and less likely to commit crimes. To quote CSNY "Teach Your Children Well"

Shout out to The Bearded Butchers for their awesome videos and their seasonings. I just received another order of Bearded Butcher seasoning, this time added some Black to the order for a try. I have so far made several batches of jerky with Original; Chipotle; and Hot, smoked on my Traeger. So far the family and friends favorite is the Hot, but with that being said they still love all 3 flavors. I have made a batch of Brauts with the Chipotle and Pepper Jack Cheese - and a batch of Brauts with the Original and Chedder Cheese. Turned out awesome. My next version of sausage I plan to make in the coming weeks is Cajun Boudin. Maybe you (The Bearded Butchers) could do a video on making this sausage with a version of a recipe you like for our viewing and processing pleasure. Thanks again!! :)

Great ideo, I can keep my jerky in the fridge vacuum sealed, for at least 5 months with no problem, you just have to dry it to more than 30%, and no jerky is so wet.

Growing up in Montana whenever I went out and got a deer I would jerky the whole thing. Me and my friend would skin it quickly after a kill. Salt pepper, lemon juice and molasses in a 5 gallon bucket. Soak it for few hours, we would then open the door of the oven slightly and set ir on low temperature. It was perfection.

I have found to make slicing easier to put the meat in the freezer for 20-30 minutes. It holds the shape and isn't flopping all around while I'm slicing. That deer is so lean, I'll have to try some deer jerky.

I have a friend who swears on hanging deer with skin on for 3 weeks if he can. Up here currently we hang out doors so it's weather dependent. I plan on the future to make a small walk-in in as u see some do with cool bot. I have had one deer hang outside for a bit with no skin as I got it skinned and I've had quarters sit in my fridge til I can break it down in a day or two. Both of those times I've noticed a tough outer skin on the meat. So my question is why do u hang deer without skin and generally how long?

My smoker doesn’t go down to 165. The lowest it will go is 200. What would you recommend for cooking at that temperature? I’m guessing till I have an internal temperature of 165.

When I make jerky, which I do often, I simply put it in zip locks with some silica packets and it keeps it fresh for a few weeks. Just make sure to use as many packets as is necessary for the amount of jerky. They're also called desiccant packets. They suck the moisture out of whatever they're placed in and it'll keep the jerky really fresh.

This goes to show ya that they are not using a super fancy knife to do the job. A standard affordable Victorinox blade. They are smart in using a Vic blade as other places suggest its a steel that is harder than 420j but not as hard as 440A, because one does not want a knife edge to chip off from hitting bone leaving the chip within the meat. A softer hardness is preferred when boning in a knife edge as if one accidentally strikes bone it should bend/curl versus chip. He also hones it on the diamond honing rod before every use making those effortless smooth cuts look easy. Let the knife do the work. They are also very skilled and knowledgeable.

I like the BB Black seasoning, but it has virtually no taste on the beef jerky. Highly recommend you stick with a standard wet marinade.

I just did this with your chipotle seasoning. It came out amazing. I had to do it in the oven. I'm gonna try to get a traeger in the summer.

Only problem I see is that most modern Pellet grills will go no lower than 180 ????
