It's Brioche time again - I love your no-knead brioche recipe. I made two "double batches" have even froze the dough and it worked beautifully when thawed. As I have early access to the video I made this recipe - I baked these rolls over a week ago and shared at the office. Delicious with apples and fresh persimmons! Everyone, year-end will soon be here and Charlie has 190K subscribers - let's see if we can get him to 200K by the end of the year - I think it would be a nice Christmas gift for him. This brioche technique has been a revelation. I’d never been able to do brioche before because I don’t own a stand mixer, and my attempts to do it by hand had failed. Now I can make it so easily!

I made a double batch of of the rolls to share at the office today. As I was in Hawaii last week, I thought that I could add a tropical twist the recipe - I purchased Strawberry-Guava and Mango-Pineapple jams. When I returned home, my daughter said she stopped by and harvested many of the persimmons from my tree, but left some for me. I picked a few and used them in place of the apples for the second batch of rolls. Apple/strawberry-Guava jam and Persimmon/mango-pineapple jam are both excellent combination of flavors. So soft and flavorful! I hope they enjoy them in the office today 😍 As ever, many thanks to Charlie for these wonderful Christmas bakes!! (#286) Photos have been posted.

I have a cinnamon hater in the house, so I use 5 spice powder a lot (ironically contains cinnamon, but they don't know that). It works terrifically with banana bread. If you can get hold of quinces, I think they would be amazing in these. Thank you, you're inspiring!

Great to see a brioche recipe that doesn't need a lot of kneading/working with all the buttery mess that the classic brioche dough creates and without having to add it little by little over a long period of time. I'm definitely going to use this very often since I love brioche 👍🏻👌🏻

Very nice I love the idea Chef John at Food Wishes did a similar thing with puff pastry and put the cinnamon sugar inside instead of the the jam called Baked Apple Roses

Subscribed I think I will use a mandolin to slice as it is the best way I know for me to get uniform slices. I hope it comes out well not very good at baking but looks easy enough.

Another awesome recipe ! 😁 I wonder if it would help to macerate the apple slices in cinnamon sugar and a little bit of lemon juice for extra cinnamony flavor 😋 I have also just used this brioche recipe today for cardamom buns, they turned up amazingly buttery delicios and that fresh cardamom .. divine ! My fiancé could not wait longer than 10 minutes to eat one hot as it was 😂

Macerating sounds like a great idea. That would also soften them and make them more bendable. You could add more apple slices that way I reckon.

I sent this video to my mom, basically demanding she try baking these. She's uncomfortable using that many eggs cause her mom was in the dust bowl and there's some generational trauma stuff going on. But this is a time for healing! As such, I am encouraging her to get into more brioche, not just for my own greed for delicious bakes goods, but also to begin the healing process

Great video! I'm not sure I understand why active dry yeast needs to be "activated" here, while it doesn't when making bread.

quick question about active dry yeast. I remember you did once a comparison of yeasts, wasn't the conclusion that you don't need to activate anything, that at worsts it will take longer for yeast to get up and running?

It will take way longer with this kind of recipe. I doubt it would rise at all in the fridge. Spending 10 minutes to activate is better than waiting several more hours I'd say

Okay, this is funny - I was just watching a TV movie and the lead actress is a baker - she was making a pastry and I thought the process looked just like this recipe - she called them “caramel apple roses”. 😊

Hi, I tested this recipe today and unfortunately the dough completely failed to rise despite the higher room temperature. It didn't even rise in the oven. Do you know what could be the cause?

Strange. It should have risen well, especially at a warmer temperature. Perhaps you could have placed it in the oven with the light on. It must rise eventually.
