✅Ingredients
• 2 tablespoons olive oil
• 1½ cups white rice
• 1 (15 ounce) can coconut milk
• 1 cup water
• 1/2 teaspoon salt
✅Instructions
1️⃣ 00:00:18 - Heat olive oil in a medium-sized saucepan over medium high heat. Add in rice and toast, 2 to 3 minutes, stirring until rice begins to turn a light golden brown.
2️⃣ 00:00:46 - Pour in coconut milk, water, and salt. Bring to a boil.
3️⃣ 00:01:06 - Place a lid onto the saucepan and reduce the heat to low.
4️⃣ Simmer on low 15 minutes, until all liquid has been absorbed and rice is tender. Use a fork to fluff rice and serve hot.

This rice is untouchable!!! I already cleared walmart of all their cans of Imperial Dragon coconut milk!!!😄😄😄 I added herbs like Italian seasoning & Parsley to the simmering rice, and will add a little butter when it's done!!!!

Just made some coconut rice today and is it delish! I followed the recipe to the letter, using coconut oil to toast my jasmine rice and it is PERFECT!!!!! (...and pretty darn tasty warm with a little sugar sprinkled on top....) 5 stars!

I agree with using the coconut oil and I will also add some kefir leaves and lemon grass and a bit of sugar.

@@BXLatina35 the last time that I made it I went past the 15 minutes until I got to the firm fluffy consistancy! You should have continued simmering until all of the liquid is absorbed. Sometimes it may take longer, I do the same with Spanish Knorr rice!!! You need to just attend the rice stirring and replacing the lid a few minutes at a time until the liquid is gone, but don't burn the rice, so keep an eye on it!!!!

Yeah, I'd use coconut or maybe avocado oil. Olive oil and rice shouldn't even be used in the same sentence. Olive oil and coconut doesn't even sound good.

I follow the directions exactly except I threw in some sliced green scallions for color…Simply the best coconut rice I’ve ever had, be it at a restaurant or homemade…Thank you!!!

I did this but added a little bit of spices. One green cardamom, two cloves (crushed), and also a small bay leaf. Fry those in the oil first to give it a nice but subtle infusion of balancing spices. Remove the bay leaf before adding the rice and following exactly the videos instructions. It comes out very nice. My whole family, African husband and mother-in-law, and my two babies, really loved it. I served this with an aromatic bell pepper and eggplant stir fry and beef side, but salmon was the alternative. Very nice.

I am cooking this now but only had brown rice. I also threw in some unsweetened coconut flakes. Hopefully it comes out good 🤞🏼

Traditional thai indonesian calls for Jasmine long grain rice. I use the Carolina brand and it comes out perfect. Soo good with a nice thai pork loin or satay

Hey Everyone, I'm barely learning how to cook and I have a question. I cook it in a saucepan. I add fat to the bottom, and water, get it to a boil, add the rice, salt, close lid and simmer for 17-20 min. The rice comes put pretty good. I am noticing that many cooks tend to put the rice and water in together and let it get to s biloil before they simmer. If I have a metal instead of a glass lid, how do I verify that it is boiling? Is it the visible vapors that notifies you of a boil? I ask because many recipes tell you not to take the lids off under any circumstances after you place it. I'm just curious because I don't want to burn the rice. I've made too much progress for that lol.... Thanks for reading

keep the lid off until it starts boiling, then cover and reduce heat. I normally stir my rice every 5 min

I think it is a personal preference. You rinse if you like the rice fluffy, or don't, if you want it sticky like risotto.

It’s an important step to remove excess starch, otherwise rice will come out sticky and won’t separate

I would definitely wash your rice. Apart from the starch it likely has all sorts of dust on it.

I don't like mushy rice. Especially Jasmine needs to be separated. I use the finger method, where you stop the liquid at almost to the bend of the index finger. I can't wait to make some right now. I think I'll use coconut oil instead to add a little more island flavor. I personally don't like the taste of olive oil.

Wash rice if you want it to be seperate grains, don’t wash it if you want it a little bit more sticky/clumpy. Rice has starch on it which turns to a kind of glue when cooked but that starch rinses off very easily. It’s really up to you how you want it.
