How to make easy & delicious Bacalao | Codfish Fritters | Veggies. I made my version of the most delicious salted codfish fritters.

Ingredients:
1 large egg
1 pound of salted codfish (bacalao)
1/4 cup all purpose flour
1/4 cup cornstarch
1/2 cup chopped broccoli
1/2 cup shredded carrots
1/2 cup shredded red cabbage
1/4 cup cornstarch
1/4 cup extra virgin olive oil
1/2 cup sweet pepper
1/2 cup onion
1 tbsp grated garlic
1/4 cup scallion
1/4 cup finely chopped parsley
1 tsp cayenne pepper
2 tbsp chopped raisin
Instructions:
Combine egg, cayenne pepper and garlic in mixing bowl.
Mix in flour and cornstarch to egg batter
Gradually add 4 tablespoon of evaporated milk
Mix all vegetables and raisins
in a large bowl
Add 1/4 cup extra virgin olive oil
Mix together well
Add 1-1/2 cup shredded bacalao
Add the egg batter
Combine the egg batter then mix together thoroughly
1. Boil the Bacalao to remove salt (2 slices of lemon)
2. Rinse bacalao then shred. Remove any fine bones.
Add 1 tablespoon olive oil to preheated pan.
Shape mixture into patties
Fry in a large skillet over medium-high heat.
Cook for 4-6 minutes on both sides (depends on size)
***cornstarch makes the flour coating crispier.
Homemade Dip Sauce:
1/2 cup mayonnaise
1 tablespoon mustard
2 tablespoon ketchup
1/2 teaspoon cayenne pepper
1 tablespoon olive oil
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
Mix all ingredients until smooth. Refrigerate until ready to serve.
