Pam love your tips for substitutes. And your cooking. I also love collards. ONE tip don't waste the stems!! Strip leaf cut stems zip bag and freeze til you make smoothies or juice drink for your health stems on all leafy greens can be mixed in zip bag and they're packed full of body healing nutrients. Hey Pam!!! I’m a new subscriber and I wanted to thank you for your clear and sweet directions. I’m a southern cook who even though I’m 66 years old I’m still learning new techniques everyday!!! My elders were all Carolina country folk. Growing up, I would ask Granny for a collard green biscuit and loved it! Watching your video, I could almost smell them from here. I'm the guy tasked for making collards for the holiday gatherings. :) Thanksgiving is tomorrow, I have everything I need, so I'm going to kick them up a bit. I've always wanted more flavor in my greens. I'll do a follow-up on the family's reactions. I liked the snappy taste test too! This video made this old guy feel good for a lot of reasons. Thanks Pam!

When you said you use bacon grease for flavor ( what true old-school cook) don’t have a pot of bacon grease on the back of their stove!! I’ve always called the green juice pot liquor and then you had corn bread to sop it all up with. I subscribed! You’re my kind ok cook… God bless and keep cooking!

I cook Collards at my job a lot, easily one of my favorites greens, and this looks amazing! I can't wait to prepare this for my residents and my staff. My mom taught me to cook them years ago but only her and I eat them at home, so glad to have another collards recipe for the cook book! All my love to you and yours! 🖤

I haven't had greens since I was a kid. My late husband didn't like those kinds of things. He didn't like cornbread or greens or anything like that. I'm going to make this recipe as soon as I recuperate from the knee replacement surgery

Miss Pam, that is how I fix my greens 😊. I sometimes use Ham Hocks and they are delicious!! I always use a sause like Louisiana hot sauce, and I use chicken base for broth to cook them in. They are to die for delicious!!! Thanks for all you do!! Love your Channel ❤

Adding chicken broth or vegetable broth to your greens instead of water also adds flavor. Me I like adding smoked ham hock to mine.

Miss Pam, Watching your video makes me miss the South. I have to tell you a funny story, I'm from the north, (I know, I'm sorry too) but over the summer I decided to grow my own collards. I thought, well I'm the only one that eats em, so I should only need one plant. ( I know, stop laughing) Ironically, my friend Pam who lives in Georgia laughed at me too. Ok, so it's kinda funny now, wasn't at the time, but I honestly thought that I could grow one plant just for me. During New Years, I bought two big bags of Old Glory Greens and made them in the pressure cooker. Needless to say it wasn't enough. I ended up with only two and half bowls from that. I'm convinced it's not the same unless someone from the South makes em. lol. God, I miss the South!

Love your videos! I just have one request or just something for you to think about. I am fully blind and I do enjoy your tips and your tricks and the things that you show and the things you explain on your RU-vid channel or channels! Can you try to make sure that you put a lot of detail if you can remember to put in your videos please! It helps me because sometimes some of your ingredients are not reachable or accessible on your description box underneath your video. So I really appreciate when you actually put the amounts and the type of spices that you put into your recipes. And I love to hear the enthusiasm as you cook and explain things! I don’t have to see your facial expressions I can hear the joy and excitement in your voice!

I cook collard greens a lot! Just ate some. I Sauté mine with onions , mushrooms , Himalayan salt & black pepper! I will fry up chicken thighs with olive oil and and season with Himalayan, Black pepper & Garlic powder . Add sliced avocado on the side . 😋 I’m going to cook this recipe to switch it up! Thanks!

I've been making collard greens and mixed greens for years and I simply fry my bacon and onion then it might green skirt with a little chicken stock and let it sit down and it comes out absolutely delicious

Love love your shows. I do all the steps. I keep the stems and juice them. I either add ithe juice to pot or freeze. Also I use chicken broth and Olive oil no meat.. add turnip roots s and other herbs.

We skip adding vinegar to ours but I add a pinch of baking soda...which makes them go tender much faster. I also use bacon ends chopped and let them cook in the pot so all the flavor renders into the greens. Love your recipe and style though.

Chef Pam, I don't know where u are from, but we real southerners don't eat collard greens w/a fork. The only utensil we use are @ the end of our hands, u mash that corn bread into ur greens & use ur hands to feed ur face. U might be trying to impress the white people, but we don't need nor use any utensils, except our God given ones.🥰

I like that ham bone from honey bake hams. It will set off some greens. I mostly cut meat of and use it in the greens. Good job.

Your like me in that I always wash my produce, dry beans or rice at least 3 times. The vinegar and bouillon is a good touch. I will try that.

As pretty & crisp that the leaves of the greens were prior to your cooking them, they had to turn out good. I like the seasonings that you used.

OMG really! I used everything from ham hocks to salt pork but bacon actually provides less fat and with this 25 pound turkey I’m cooking I didn’t want more turkey in my greens or dressing lol! Try it you would like it. Thanks Brandon

I have never heard of “collard” greens before, this reminds me of our national dish , which is bacon & cabbage, boiled together in the same pot & served with beautiful fluffy spuds ( potatoes) delicious 🤤🤤🤤🤤🇮🇪🇮🇪
