❄️ Mix up a large batch of bread dough with a bowl and a wooden spoon. Instead of baking it today, freeze the raw dough before the first rise, then thaw, shape, and bake as needed. Sent over here by Mary's Nest. Any friend of Mary's is a friend of mine. Thank you for an easy, reliable idea for a seasoned baker who always thinks it has to be hard to be great. I recently found the 3 ingredients rolls using 3 tablespoons of mayonnaise and 2 other ingredients. and it was really great to have these at a recent gathering where I was expected to make the rolls. So this freezer bread dough goes right along that idea. I bought a Danish dough whisk just recently. It really helps keep the flour in the bowl and mixes ingredients up so much fast than a big spoon.

Exactly the video I needed. I am making homemade wheat bread for a bake sale today because I won't have time to make it next week when I need it fresh out of the oven. I just wanted to make sure I could do it before taking the time to make all the dough. I'll be using a copycat outback steakhouse brown bread recipe. So good.

That was fun to see! I make all my loaves in this manner but I am more aggressive with the kneading because I do 12 loaves at a time. I also do everything in the bowl and I use lard - just another variation. I think I am going to try freezing two loaves the next time I make bread. Your magic trick made me smile! Good video!

@dhansonranch I'm sure this is going to sound dumb but I'm a city girl. 😆 You use the lard in place of the oil, correct? Do u use the same amount? I just got some lard from an Amish farmers wife. Imo, nothing tastes better than lard but I have no experience using it! Ty and be blessed.♥️

@@sherryk30 Does not sound dumb at all! Yes I use the lard in the same amounts as the oil. I make my liquid (water in my case) a little warmer and then slice the solid lard into the water . The water then melts the lard. One thing to remember is that if you are using cold lard from the fridge it will cool down your liquid. So, you want to stat your liquid a little warmer. After the lard is melted I would sooner have to wait for the water to cool down to add the yeast rather than trying to heat it up, so I err on the side of warmer water. I also use lard to grease my hands during the kneading process. Good score Sherry! Interesting Tid Bit though - my diabetic friend can eat more of my homemade white bread than he can of another person's white bread or any other bread. Researching it and talking to others, it is because of the lard. It slows down the processing of the carbs so it does not spike his levels. Have a Blessed day!

Hi Heidi, welcome! I'm glad you found me, too! I'll explain. Most people, or at least most Americans, prefer bread that is soft and fluffy. Using part bread flour along with the fresh milled flour gives the best of both: the flavor and nutrition of whole grain along with the texture people like. You can make it with 100% whole wheat if you like, but I recommend making it the way it is written the first time. Blessings, Michele

Hello! I have a 87% hydration 100% wholewheat bread dough recipe, it’s a basic sandwich loaf. do you think it’s better to freeze the way as shown, or it may even work if I shape it transfer it to the tin and then freeze, defrost, proof and bake?

You are an experienced kneader since you make chapati, so knead less time, until the dough feels bouncy and resilient. It will tell you when to stop. What flour will you use? 😘 Michele

You are super cute! Came over via Mary's Nest and now a new subscriber. I posted a couple videos on rolls made using the dough setting on my bread machine, I wonder if this recipe would work. I'm thinking I would need to cut the ingredients in half. Any thoughts on this? Thanks for posting your recipe.

Welcome! That's a good question, Dorene. I have not tried it with a bread machine. This makes 4 loaves, so I suspect you would need to quarter the recipe to make it work. 🌸 Michele

Thank you for this recipe. I will mix it. Let rise l hour. Shape and make the 4 loaves. let them rise top of tins and then bake. I have neighbors I bake for. One loaf for each will be perfect. I will not need to freeze. Hope it works????? Just going to SKIP the freezing. It shoud be ok? Aria

You have a generous heart, @ariainman. This recipe contains a generous amount of yeast to compensate for the effects of the freezer. If you bake without freezing the dough, the loaves will be extra fluffy. I have done it, I often bake 1 loaf and freeze the other 3. Enjoy your baking day and I pray you are blessed for sharing. There is a $60 hand grain mill that connects to the counter if that fits your needs. I just tried ours and the whole family loved grinding the grain! In case it helps! (I never waste money on things that have easy to do versions).

I'm so glad, thank you for letting me know! You can use white flour, yes. I used to make this with all white flour and it was very nice. You can use part rye. I find it works well with up to 20% rye flour. I have not tried it with all rye. Let me know if you do, I'm curious. Thanks for this great tip! I hadn't thought of doing that! Question-- do you find the bread gets crumbly or too soft? Sometimes when I make yeast bread the slice just falls over / too soft, crumbles easily. I don't think I'm over proofing... I tend to prefer a sourdough loaf for the way it's more moist and holds together better. Do you find yeast breads are more dry hence crumbly? My 3 kids like yeasted bread. We want a nice slice that holds together to make pbjs or grilled cheese! Thanks again!

Hi Tiggywinkle, there can be a few reasons for crumbly bread: too much flour, too much yeast for your elevation, underkneading, and/or overproofing. It may take some experimenting to figure out which is the cause. Yeast bread should hold together and have a soft, springy crumb that slices cleanly. 🌸 Michele

Love this but may I ask. For medical dietary restrictions I can’t eat whole wheat bread. I have to do white or sourdough. Will this work with just white bread flour only. Ty for showing us the wonderful time saver. I hope you don’t mind me having a question.

I just read the comments and found my answer but ty again with health issues this will be a blessing to my family. When I’m not about to make anything that is not ready to go and my husband can do this with the frozen bread. And I won’t have the guilt of not being able to prepare a good meal. I have, it works well with 100% freshly milled wheat. I've used both traditional hard red and hard white with equal success. The loaf will be slightly more compact than one made with a little white flour, but the toast and sandwiches it makes are truly scrumptious. 🌾 Michele

The liquid needs to be just lukewarm, to minimize the activity of the yeast. You want to save the yeast activity for when you thaw the dough, and using lukewarm water helps with that. I am glad you're enjoying your bread! Homemade bread is usually kept at room temp for 3-5 days. This will be influenced by your climate and the season. If you notice mold forming within a few days, you may need to just keep a half loaf out and freeze the other half. @@berrybunch6806 okay. It looks like your pan would equal 1 1/2 regular size bread pans, so perhaps try dividing the full batch into 3 pieces instead of 4 like I did. Two pieces of dough is too much. Make sure to follow the tips I share on how to tell when your dough is ready to bake and also how to tell when it is ready to pull out of the oven. Blessings, Michele

It might look like it, but the first rise is divided between when the dough goes in the freezer and later when it thaws in the fridge overnight. When you are ready to shape the bread into a loaf, you will notice the dough is soft and puffy - this is the first rise. The second takes place in the pan. 🌻Michele
