INGREDIENTS
• 600 g (21 oz) dry pinto beans, rinsed
• 2 L (8.5 cups) water
• 10 ml (2 tsp) salt (+/- to taste)
• ½ onion
• 1 jalapeño pepper
• 3 garlic cloves
• 3 bay leaves
DIRECTIONS
1. Rinse dried beans and add to a pot. Add enough water so the water level is about 5 cm (2 inches) above the beans. Add 5 ml (1 tsp) salt.
2. Add two quarters of onion and both halves of the jalapeño to the pot, followed by garlic and bay leaves.
3. Stir and bring to a boil over medium high heat. When the mixture starts to boil, reduce heat to medium and stir occasionally over two hours. Add salt and hot water as needed so that the beans are savory and don’t dry out.
4. After 2 hours of cooking, cover and simmer for another 20 minutes or until beans are fork tender.
