How to make FUFU and EGUSI SOUP/STEW for your viral TikTok African food challenge

INGREDIENTS: Egusi soup-:
* 6 each, chicken drums and thighs - cleaned with lemon juice
* 1/2 tsp Granulated garlic
* 1/4 tsp cayenne pepper (optional)
* 1 tsp salt & 1/2 tsp black pepper
* 1/2 tsp paprika
* 1/2 tsp granulated onion
* 1 chicken bouillon/stock cube
* 1 Tbsp olive oil & extra for oven grilling chicken
** oven grill chicken with ingredients above for 12 minutes with broil option **
* 1 large onion chopped
* 1/2 Tbsp garlic paste
* 1 Tbsp ginger paste
* 1/2 cup smoked herrings for authentic egusi soup flavour
* 2 habanero chilis (leave one with head on & split other open to release its heat)
* 2 small red bell peppers (seeded and blended)
* 4 vine tomatoes seeded (seeded and blended)
** transfer grilled chicken with its juices into cooking pot, and add the ingredients above, and cook on medium heat with lid on, for 10 mins till a vigorous boil is reached **
* 3 cups pumpkin seeds AKA egusi/pepitas
* 1/2 cup vegetable broth (optional)
* Blend egusi with water. Enough to be above egusi at 1 inch level (approximately 2 & 1/2 cups)
* Add 1/2 cup extra water from rinsing blender
** Add blended egusi to the pot. Cook on gentle/low heat with lid on for 15 minutes. Stir after 15 mins and cook a further 10-12 mins with lid off stirring periodically. When oil has resettled on top of the sauce, it indicates, egusi is cooked. Add ingredients below, and fold in, cook for a further 5 mins and serve **
* Add green leafy vegetable of choice (I used 3 cups of chopped kale)
* Add 2/3 cup palm oil for an authentic egusi flavour
INGREDIENTS: Fufu :-
* 1 & 1/2 cups fufu flour
* 3 cups water
* extra hot water for steaming, and a softening fufu to your preference

Plenty of African places I could get it from but I truly think African food is booming, it's so rich and diverse with a variety of spices and uses for them! I'm honestly completely intrigued and addicted, I was born and raised in France 😂 but I want to learn how to use all these beautiful ingredients

I drove 45 minutes today to try it for the first time. Lately people have been posting videos of themselves trying it and spitting it out and being very disrespectful to the culture but I thought it looked really good so I got some and loved it. The problem with ppl is that they expect food to taste the same as it tastes in their cultures. Many times it is not so and a lot of the taste of foods is acquired. It is very disrespectful to video yourself spitting out other ppl's food. They are not fools they are plain uncultured, and undisciplined and with no values or good upbringing.

Before trying fufu became a TikTok trend, my Nigerian friend took me to an authentic Nigerian restaurant to try fufu and various stews. Before we arrived, I was already in the mindset of being open to a new experience... from the way the staff would treat me, restaurant atmosphere, food wait time and the way this ancient, sacred food from another continent would taste. When the food finally arrived, I was overwhelmed with joy to be experiencing an array of new flavors. Then, when I later saw people on TikTok gagging when trying this food, it broke my heart. We need to teach our children and each other how to be more receptive of how different other cultures are. People need to understand what is “normal” in a community’s general taste preferences completely depends on our environment, so “normal” is completely subjective. In order to argue that something is objectively “normal,” the subject matter must concern health. If you try Nigerian food and think it’s “gross” or “weird,” consider keeping your limited opinions to yourself. It’s a bad look to comment on other cultures based off of your preference of taste.

I make semolina with potato starch(very little) to make fufu. I am from Congo, we don't eat this kind of fufu.

I love the focus on no waste. I always rinse my sauce jar/can and then pour it into whatever I'm making. But you never see that on youtube or recommended by cheifs. I love to see it encouraged, because it makes sense and it's what people actually do. Loved this video and the intro to African cuisine!

I typically find myself fast forwarding through most cooking videos, but not this one. Not only are you a lovely woman but you have the most calming voice... not to mention food that looks absolutely amazing! Our family will be trying this for sure! I just finished making the Egusi soup. Thank you for another wonderful recipe. I had ordered Egusi soup at an African restaurant and feel in love but the cost of $19 (with tip) meant that I wouldn't enjoy it often :-( Now thanks to your recipe, I can have Egusi soup anytime I want. I worked with a Lady from Ghana when I was in the military. She said the EXACT same thing about egusi not being eaten/served with fufu in Ghana and that what we were seeing all over tik tok was Nigerian influence. ❤ I can’t WAIT to make this 😋

The first snack that I tried when I landed in Accra for the first time was kelewele purchased from a vendor on my way from the airport. Ghana had me at first bite! Thank you for this and all of the other recipes and step by step instructions for these delicious dishes. You are more than a cook/chef. You are an ambassador. So many Ghanaian dishes remind me of the food that my great grandmother in the South Carolina sea islands prepared. It is amazing how people of African descent in the diaspora, no matter how many generations we've been estranged from the continent, still carry our food and other traditions with us. You absolutely need to be on the Food Network so that those of us who have never tried West African dishes, might be inspired to do so respectfully. TikTok egusi and fufu challenge aside!

I’m so excited to make this. I’ve never tried Ghanaian food before and I’ve never met an American who’s eaten west african food. It looks delicious, love from America 🇺🇸 4:17 that chicken is so vibrant with the spices. My brother is coming from Richmond Virginia to Indiana and hasn't been here in 15+ yrs. Yeah. I’m one of those Americans that drove 4 hours to a neighboring state (my state doesn’t even have African restaurants 😩) to try African cuisine. Not a fan of the super sour, burned leaf tasting egusi stew I ordered. So I am very glad to see this recipe. I am actually making it right NOW. Using spinach in mate as of bitter leaf (no stores here has it). Excited that u showed a recipe with chicken because all others have cow skin and other parts and we can’t get that in my area. Super excited and I will come back later to give you an update. By the ingredients I already know I am going to love it.

It was AMAZING!!! Nothing like what I ate at the restaurant 4 hours away. My children and I loved it! I didn’t have egusi seeds. But, I seen another video where a lady said I could use sunflower seeds. So, I used those. And I also used spinach at the end. Kids went back for seconds!! Lol. Very good friend!

I can only eat egusi stew (soup for Nigerians) with rice, boiled yam, plantain, eba, banku, kenkey but never with fufu. As Ghanaian fufu is only eaten with soup (watery in nature), but I guess this is the Nigerian way. To each their own, and thanks for the video. 👏 It's good for those who want to try something new. ❤

Honestly I think when Nigerians say "Fufu" they are referring to pounded yam or poundo yam. It's like slang to call it fufu. Normally egusi is eaten with pounded yam, eba, or amala.

This seems like the easiest recipe I’ve seen so far. I live 5.5 hours from any African food stores. I live in a very rural area in Northern Ontario. I love it out here so much. It’s beautiful and life is so relaxing. I love food from all cultures. This is the only reason I miss the city sometimes. Thanks for sharing, I’m so excited to try it. I discovered this recipe at 9:20 pm and the chicken in out of the freezer at 9:30 😂 Luckily I have everything in my kitchen to make the soup. The fufu can wait but that soup needs to be ready ASAP 🤤 😍🥰

I live on the Northside of Chicago so there's a large African community here so we have many African restaurants, but my neighbor has a daughter who is part Nigerian and she made Egusi Stew and it was so delicious. I really enjoyed your video and the pot with the little pig on the handle is so cute ☺

I've always wanted to learn how to make fufu because it reminds of my 3rd grade teacher who had brought fufu and okra stew to school so we as kids can enjoy it. Boy, was it good!!! Here I am twenty years later, still craving some more Fufu and okra stew to enjoy. Amazing!!!❤

As an Igbo Nigerian this is very different from the traditional way this soup is made (especially the part about the palm oil being optional!)but it looks lovely so I’m intrigued to try a different method.

So where I live I did not think there was an African restaurant but me and my friends we were riding around in the car and out of nowhere in the smallest place like off in the corner of a shopping center. I see a restaurant that is an African restaurant it’s traditional Nigerian food and I mean to tell you I was excited because I wanted to try this my dad actually used to go to Africa as a missionary and he got to try all kinds of stuff. I never got to go. I’ve always wanted to try African food, and now that I know that there is one iamb trying it I love to see culture and everything thrive and people trying new cultures foods. It’s just amazing.

I discovered egusi last year looking for recommendations on what to order to support local African restaurants. I have dared to make it once only with oatmeal fufu. I like this simplified recipe too since this is what is readily available without going to a specialty store.

Yes even in cameroon we do not eat egusi stew with fufu but with rice,yam or boiled plantain😄😄😄😄. The one we eat with fufu has both okra and egusi. I will try this recipe for sure. Thank you ❤️
