Since I discovered this video of yours I've never bought garam masala again. I make a big batch and store it in my spice culvert. Lovely flavour. Thank you very much for your time and effort. I'm a moderately good cook (or so says my family!). Indian food was always a bit of a mystery to me, and thanks to your channel I've been able to prepare such wonderful Indian food... my children don't want to go to Indian restaurants any more because they say daddy's food is better. And that's only thanks to you!

Finally got my hands on some mace and made this blend. It is very good! A more rounded, warm and savory flavor than other garam masala blends I've tried. This will definitely have a place in my spice library.

I made your mom's Garam Masala yesterday, following her recipe exactly. Tonight I made a curry without using any shop bought paste. I fried onion, bell pepper, chilli's, garlic, ginger, turmeric, your mom's Garam Masala, chopped tomato, butter, lemon juice and Kasuri Methi with salt and sugar to taste. With a sprinkle of chopped coriander and some mint yoghurt It was absolutely gorgeous. Thanks so much for an authentic Garam Masala recipe..

Thanks for the recipe! I just made some and it tastes really good! A bit sweeter than my usual shop bought one which also contains some chilli and turmeric. I might have added a bit too much cinnamon (used the outer bark whose flavour I prefer) though, haha. Found a slight difference in my aloo matar‘s taste on which I tried it. Not better or worse, just a bit different! I like both varieties and am happy to be able to make my own garam masala now!

I'm in the US and have very little knowledge or experience of Indian food..so I'm finding your channel fascinating! Thanks! And I'm glad you have this video now with your mom...shared family traditions and recipes are so wonderful, but we often forget about them until it's too late. Would love to go back in time and cook with my grandmother again, for instance.

This is the first Garam Masala recipe i have seen that dont have any corianderseed or bayleaf in it! Its so nice how different these can be.

I didn't have the mace or clove, but it was still wonderful. It adds so much wonderful rich flavor. I think it would be great to use a teaspoon or two in American soups or Italian spaghetti sauce!

So much better than the blend from the store (coriander, cumin, pepper, cinnamon, cardamom, turmeric, mustard flour, nutmeg, ginger, garlic, cloves, paprika, bay leaves, coriander leaves). Your home-made garam masala is a completely different taste and perfectly balanced. Never going back. Thank you! Was amazing in your spicy chicken chickpea curry bake recipe.

I made the Garam Masala I had all the ingredients apart from the Mace (javentry) I went out to the local store and found it there. I made your take on the korma with the poppy seeds and cashew nuts. Used your mom's Garam Masala recipe and it was wonderful added a different dimension to the dish in a good way. I have decided I will be making my own Garam Masala from now on. Thanks to you and your mother for sharing her wonderful recipe

Thank you, this was really interesting to watch. Kind of reminds me of Shahi Garam Masala, a different blend of Garam Masala in Bengali cuisine. (Our ordinary Garam Masala only has 3 ingredients).

I made this one and it's amazing. Really fragrant and really basic. So much better than the store bought to be sure. The ones I find are mostly corriander and cumin. I love that this doesn't have coriander because it makes it really simple and basic and you can just add any other flavors you want separately. Is this the one you normally use or do you make your own with coriander?

I did not have the privilege to make garam masala, but, I did make chili powder. This is vastly superior! Very little is wasted. It's what I enjoy about East Indian food. Thank you! 😋

Chetna, I do have a question, would it be all right to use ground mace instead of the dried kind? That is the only ingredient that would be difficult to get. I love watching your posts with your mom. Family is so important!

if u live damp place then to increase the shelf life of such ground spice mixes, store them in an air tight bottle in the door rack of your freezer. Container needs to be air tight.

The first garam masala I made was a simple one that Harpal Singh Sokhi used in his mothers's chicken curry. I have a little coffee grinder like yours. Sooo great for grinding spices! Last year, I also dried foraged mushrooms and ground them to powder, to be used as spices. What mushrooms are used in indian cuisine? Greetings from the far north of Germany!

Hi, Chetna and Mum, I made your Garam masala when I ran out of the store-bought. Wow, it is a lot stronger and fresher than the other one! I have used it very satisfactorily several times. However, I ran into a bit of trouble yesterday. The cardamom pods I had used were huge, so I only used two! And yet, when I only used a 1/2 tsp of the Garam masala in a whole pot of dal, it was a little bitter. I think it was the cardamom! Do the pods get bitter when they are really large?

Thank you both for sharing your secret to making garam masala. Questions: (1) when you cook do you use only this mixture or do you add other spices? (2) do you roast the mixture before making curry with it?

So this is the garam masala powder. I dont do anything to it now, just store it in a jar. just follow the instructions of the recipe to see how to use it.

Chetna, I love watching your videos (especially your quick meals) and your mom is beautiful. This is awful to admit, but I am not a fan of cumin. Lately I have been reducing the amount when making a recipe, but is there a spice I can substitute for cumin? Please keep cooking and sharing your mom with the world!

Well you can like everything can you, so its ok if Cumin is not really for you. The thing with spices is that they are so unique with their flavours that there are no such thing as substitutes. So if you dont like cumin then I would suggest just skip it from the recipes and this garam masala and you will enjoy it more.

I have been using this recipe for as long as it's been on your channel . I have shop bought as backup but to be honest I haven't the nerve to use it. I have to make this recipe no matter.. My family would rather eat late than shop bought. Lunch tomorrow by family request ,, Dal , chickpea and spinach curry, rice and my wife insists on naan. Thank you , at least chef doesn't wash up!

I made your spinach and chickpea curry tonight and instead of the cream, I added coconut cream. It was very delicious before I added it, however the coconut didn't hurt it a bit. Thank you so much for posting this garam masala recipe. Your mother took the mystery out of it! The store bought one I had was all the wrong spices compared to your mom's. Cumin, I think was the only correct spice in it.

So interesting that it doesn't have coriander seeds in it! I have to make my own mix because in the US, all premade mixes have coriander in them and I am allergic, so I really appreciate this one. Thank you!

I was thrilled to see this video, as I just made Garam Masala for the first time, just a few days ago using an online recipe. Now I want to make your mom's recipe. I already have most of the spices in my kitchen here in Palm Springs California. Now I must find the nutmeg shell, and black cardamon. How important is that nutmeg cover thing? I think I have everything else at home, so I am going to try it anyway. Also I was hoping I could finally use star anise I bought a while ago and don't know what to do with it. Maybe next time :D

For a long time now I have bought My Garam Masala as a dry mix (to be home ground) from My preferred international supermarket and it's really good. However. Doing that does feel like cheating. I love curry and I want to try more Indian food, but I am allergic to cinnamon. So I have to make my own garam masala. Do you have any store bought recommendations for cinnamon curry blocks or cinnamon free garam masala? PLEAS HELP!

Thank you Chetna, this was really interesting! I have a bought garam masala and this made me look at the ingredients for the first time. It has similar spices in it and a couple more, like coriander, ginger, garlic, staranise and fenugreek seeds. No Cinnamon though. I do wonder how different they taste... Also I'm really tempted to get a spiceblender now. All the unground spices look so beautiful, it is fascinating how these weird little plant parts contain so much flavor. I think I'm gonna go learn some stuff about spices now.

I dont use my spice grinder loads but it is very handy to have one when I need to make these spice blends.
