OK y'all, I processed some cajun green onion sausage this weekend, let me show ya how I did it!! Check it out and thanks for watching!! Dan
Ingredient List:
4 lbs Boston butt
2 lbs pork fatback
2 cups green onions cut fine
2 cups white onions cut fine
1 cup celery cut fine
1/2 cup parsley cut fine
1/4 cup garlic cut fine
2 tbs salt
2 tbs cayenne pepper (or to taste)
1/4 cup fresh cracked pepper
1 tbs dried thyme

haha, no problem. I like longer videos as long as they show detail and I can learn something... which i did on this. I didn't get a deer this year, but I am definitely going to next year, and sausage is on the menu :)

Finally, I found a green onion sausage recipe. I'm gonna smoke mine with pecan wood chips. I use to get my wild hogs turned into green onion sausage, but the butcher would never give me the recipe. Dats OK!

Looks good Dan! My father had a meat store and this took me back to when he would make it every other week. He had huge bins, 100 lb barrels, of his secret blend of spices. I miss those days. Thanks for sharing and enjoy all that good food! ~ Jan

@@HomeInTheSticks It was very tasty but I did grind the onions with the meat and next time I think I'll chop them and just mix it in before I stuff the casings. I live in the Philippines and green onions are cheap and everywhere here.

I used this recipe, without the cayenne pepper. I used half pork and half venison. I worked at a major retail grocery store on the coast Mississippi. I made green onion sausage in the market using dry ingredients. We called it market style green onion sausage. It was very popular with our customers. This sausage with the fresh ingredients blows that market style out of the water. Thanks for sharing this recipe. This will be made in my home for years to come.

I have a friend that works in the meat market at a local grocery store over here and he makes some really good green onion sausage but I have to agree with ya, fresh ingredients in a sausage always works better. I'm glad you liked the recipe sir, it's about time for me to make some more sausage as it's starting to get cool over here, I normally make sausage once a year as I like to use the colder weather to my advantage when making sausage!! I just made this sausage but with half deer meat and man might I say it is delicious. Also took the seasonings minus one tablespoon salt and add two giant tomato's and it made some grade A salsa. Thanks man I will be making this for years. Awesome video and awsome recipe.

Another great Vid Dan with some excellent tips. I like the idea of making up the patties as a taste test, something I would never have thought about. I'm sure I heard the camera operator chuckling away in the back ground :-) All that equipment worked a dream. Thumbs up from me my friend!

Loved the video! Thanks for sharing! Go to the local hardware store and get you an Old Hickory butcher knife for 15 bucks. Get it sharp and it will hold an edge! High carbon steel is not pretty but will hold an edge. Thanks again for the video!

HA, I had this video saved to my favorites. I just watched it again and follow that same 10 minute rule of meat out of the fridge or freezer. I'm making andouille and tasso right now also trying some seasoning from Targil's in Opelousas. They have a new andouille seasoning that should be perfect for tasso, I'll send you a pack if it's good.

Made this, it’s tasty. Cooked a bit to taste it, but how long does it take for all the flavors to blend? The raw onion flavor comes through pretty strong,

How is your new sausage stuffer treating you I was looking at buying one like you have but I seen a few people posting pictures of Theresa that broke the tabs of the hopper canister did you experience that I mean I don't know what they put in there sausage stuffer and why they were cranking so hard to break the machine but I want to check with you to see if you had any problems with yours

I've been more than satisfied with the Hakka Brothers stuffer, I haven't run in to one issue with mine and I've run several hundreds of pounds of sausage thru mine!! Only thing I regret is not getting the bigger machine lol!! I would speculate that the folks breaking the tabs on the hopper would be conducive to not letting the air out of the hopper while stuffing the product, they don't have the air release screw set properly!! Let me know what you think about it and everything has a life time warranty I got alot of stuff from them I'm very impressed with there stuff
