A properly butchered, perfectly cooked flat iron (like that one!) goes toe to toe with any steak, as far as I'm concerned. I like mine swimming in compound butter with a nice stack of twice-cooked frites and a lemony garlic aioli on the side.

Hi, I made this on our gas grill tonight...Fantastic!!! Thanks, I paired it with breaded shrimp frozen, and cooked in our air fryer.

Polite question. 4:11-4:14 what would cause the grill flare up? Wood chips catch fire? There were no steaks on yet. Thanks. Love the vids.

Maybe dripped some of the oil down there. Or the wood caught fire for a quick second until the wood exposed by those slits burned off.

You should choose a cut that is best when well done then. -Brisket being one. Ribeye would be ok, but seems expensive for that.

I'm not a fan of the Jaccard, but flanks, skirts, and flatiron steaks all benefit from the Jaccard when you grill (broil/cook/braise) them quickly.

I've loved you guys for years and this looks like a great recipe. I have one big gripe that also goes back years: You often take so much care to show using the precise measurements of everything (for example, dan withe the amount of salt and spice rub in this recipe), but then when you use a grill, you always "season" it by having whaqt looks like 1/2 to a full cup of oil in a saucer and using that with the tongs+paper towels. Do you expect home cooks to waste that much oil? Or do you take that saucer and dump it back into your big bottle of oil? Would love to hear what *really* happens with all that oil and/or what home cooks should really do. Thanks!

Cooking oil is pretty cheap. You can buy a bottle for under $2. If you don't want to use that much, then don't. But to fill it back into the bottle will ruin the bottle of oil. It's not exact science.

If I need to adapt this for the oven (no grills allowed at apartment) could I use smoked salt to approximate the flavour?

Liquid smoke would probably be effective, but I'm not sure how you could work it into this cooking method.

Want a great flat iron marinated steak?, buy some jack daniel marinate in zip lock bags, buy flat iron steaks in vacuum sealed bags, they are usually in 16 ounce cuts. Place the steaks in the jack daniel marinade in the fridge for 24 hours, when ready to grill, take them out a couple hours before and sit on kitchen counter to start coming up to room temp, i prefer hickory, they also have mesquite, and 1 other flavor i cannot think of. The bags of marinate will be in a trifold bag in the bbq sauce aisle of your grocer, or should be. Grill to your liking, delicious.

@@stevelogan5475 I wouldn't make the same exact; It has at least 3 preservatives and an emulsifier in it that you don't need when making fresh.

I like that we got to smoking with dry wood. Soaking only makes steam until the water is gone, then it smokes.

@@adog7787 Not exactly. You put dry wood on coals and you get fire and flareups everywhere. The foil is to keep that from happening and just let them smolder without shooting out flames everywhere on your steak and burning them.

You should try it. Acidity helps counter the savory flavors and you’ll taste them even better in contrast. Citric acid is in everything man
