im a canadian whos never been exposed to haitian cooking so ive been binging ur vids recently, and they all look sooo good tbh. you cook w a lot of heart and care, its great that youre willing to not only show but explain your recipes and techniques and share them online for people to learn from : )

I will be trying this today! Thank u for announcing in every video, that you washed your stuff beforehand. You are teaching people who don't believe in washing their meats and vegetables something; hopefully!! I'm West Indian and Puerto Rican so we wash all our foods too!

Hello Mrs Annette Dorelien. I came to the US when I was ten turning eleven. Prior to watching your videos(all of them last night lol) I felt as though there was a lot of my culture that I missed out on. Looking at how you cook, I feel as though I can smell everything through your videos. Your videos brought back so many memories for me. Se pa de ti dlo bouche mwen ap fe la. Lol. I cannot wait to use your recipes. I want to thank you. Now since I'm a big fan.. I have couple of requests. Yesss my mama used to always have a bottle of this hot sauce she made in the fridge. She called it piman confit. She done got lazy now buying that Jamaican hot sauce

Annette I’m from Austin Texas and my question is in Texas scotch bonnet is very rare to find, but there’s plenty of habanero. Could I do this same recipe with habanero instead? Or would the taste be totally off?

sherri moore... thanks, you might be able to use a red wine vinegar for this recipe. We Usually make it with the white vinegar.

Judy Louis ... you’re supposed to use the juice to add spice to your food,. As it get low just add more vinegar and some sour orange juice.

Judy Louis ... use the oil.. but it's ok to use The peppers but keep in mind the seeds will make it very spicy, I suggest you remove the seeds before you use the peppers

Amazing, I can’t wait to try!! My only problem is a lot of times the scotch bonnet I am able to get my hands on don’t have that great aroma or spice as the ones from Haiti

naidgie... leave it out for at least a month before refrigerating.. i’ve never refrigerated mines but it’s OK to do so.

The vinegar serves as a preservative, so it lasts a long time. I still have mines from a year ago.

There is no specific measurements, the amount of liquid/hot peppers you add depends on the size of jar your using. I used habanero and Scotch bonnet peppers, onion, bell pepper, clove, garlic, green onion, thyme, vinegar, Maggie, fresh sour Orange, vinegar and salt to taste

I am sorry hun, I don't use measurements. I was taught to eyeball everything without using measurements growing up. Just use enough hot pepper's to fill a jar and make enough liquid to come at least half way or to the top. Thanks for commenting.

@@PeaceNU2 you could use oil of your choice. Leave it on the counter or cabinet for about two weeks before using, but the longest it sits the better it tastes . After you used up the liquid, just add more liquid and put peppers and salt and enjoy for years to came.
