Hausa Koko is most likely Ghana's most popular street breakfast. It is made of millet and spices, and just loved by many. Making it at home yields results that is no different from one you get from your favorite koko joint...that is if it is done the right way.
Ingredients:
7 cups pearl millet
75 grams ginger
1 teaspoon cloves (p3pr3)
2 teaspoons black pepper corn (esoro wisa)
20 pieces negro peppers (hwentia)
4 dried chilies

Some Indian supermarkets have them. Ive also bought Bob's Red Mill brand from Amazon in the past. The grains are lighter in color though.

This brings back profound memories of Wajir Barracks, Teshie, home of the 48th Field Engineers, where my father was the RSM from 1970-1977. The lady who used to sell the Hausa Koko, at the market (now named General Mensa-Wood market) husband was a drill instructor at Military Academy and Training School., MATS. By 8am it will all be gone. Very delicious. Again, I’m very impressed with your first class presentation. You make us very proud. Thank you!!!

1st time coming across your channel. I am from Namibia. Millet is a staple food for people from the northern part of Namibia. I have never seen the porridge done this way before. We ferment the grains, dry it and then mill it. From the flour we can then make a soft or thick/hard porridge. Now that I am living in CA, where the grains are expensive and milling services may be difficult to get. I will try out your method. It looks convenient for my situation.

Actually in Ghana, we also drain and send the grains to the mill.But once it is done milling, it is mixed with water and strained just like I did. Since we don't have access to that kind of mill, we just add water and blend, so yes, it is convenient for our situation too.

This is good reminds me of home am Ugandan living in the UK. This is the porridge we used to take for breakfast growing up, we normally add milk and sugar but l like this one with ginger and coco. If you live in IK try the Asian shops, ugandan shops or Holland and Barratts. Very rich in iron. Thank you.

I like koko alot because I grew up in the Northern part of Nigeria 🇳🇬 and didn't know how been it's prepared, it looks like Pap but koko's taste is very unique 👌, thank you for this recipe

It is! But if you gave a good amount of millet, once it is strained and frozen, you need just about 10 minutes and the porridge is done! Oh I bet he will be! ❤️❤️❤️

I'm a retired culinary professinal, and I'm always fascinated at learning the reasons of why traditional foods are prepared in certain ways. Can anyone tell me why these types of porridges are blending and strained so thoroughly to get a completely smooth porridge? And is the fermentation for flavor or to increase the nutritional value or digestibility? I make a spicy millet porridge, but I prefer the texture of the whole grain. Usually I'll boil the water for cooking the millet with the spices for 10-15 minutes; strain out the spices, and then sdd the millet and cook until the millets are soft and creamy. Sometimes I'll add some oat flour or sorghum flour for variety and more nutrition. Love to serve these with fresh fruit, nuts, and honey.

We Haitians eat out of calabash as well, more common in the country side since people in the capital think they are aristocrats and I think when our ancestors went to the Caribbean they were looking to make this. However, I don’t think that they had the time to embark in the boat with belongings so once they get to Hispaniola they invented Akasan meaning A.K.A 100 out of corn 🌽 please check it out once it’s all done and all you can decide to add milk and sugar in it after or before your choice really… no rules👌🏾

Oh wow!! That is why they say we are related! We also have asaka in Ghana and it is corn porridge. And with even our regular corn porridge, you have the option of adding the milk and sugar on the stove. Thanks so much for sharing💜💜💜

@@KwankyewaasKitchen thank you for your reply love your channel I pray to eat your food one day, we kept almost all African cultures from fried turkey to jute leaves and our fufu is made out of breadfruit give us same result. Even one time from a friend of mine I heard her saying “Adje” I asked her what it meant she said it’s when you’re sympathizing with someone or a situation that is unfortunate like meaning like poor this or that” we use it in Haiti as well for the same situations 👌🏾In Haiti some people don’t like to say it they think that it might be because of the level of someone’s education, but now I know it’s because in reality we never let Africa mentally.❤️ keep shining sista!

I made the porridge yesterday and today. So good. I was so scared my stomach will bother me cuz of the gluten in millet that I can’t tolerate. I used millet from Bob’s Red mill Millet that is gluten free. It was a life saver. Thank you for sharing your recipe
