4 cups rolled oats (old fashioned)
1/2 cup chia seeds
1 cups almonds, chopped
1/3 cup pumpkin seed
1/3 cup walnuts
1 cup coconut chips
1/2 cup vegetable oil
1/2 cup honey
1/2 tablespoon vanilla
1/2 tablespoon salt
1/2 tablespoon cinnamon
1 cup dried fruit (raisins, cherries .)
1. Heat oven to 150°C. Line 2 baking sheet with parchment paper.
2. In a large bowl combine the oats, chia seeds, almonds, pumpkin seed, walnuts,coconut chips, salt, and cinnamon.
3. Mix together the oil, honey and vanilla, and drizzle over the granola. Make sure everything is well coated. Spread the granola on 2 sheet pans evenly. Bake until golden and crunchy. Stir every 10 minutes it will take about 40minutes depending on your oven until it becomes lightly golden.
