Hi all and hope you enjoy my latest video! It's a detailed tutorial on how to infuse honey with lavender, rosemary, and vanilla & cinnamon. It's quick and easy and is not only a delicious addition to your own kitchen, but herb infused honey makes great gifts too.

Great video! At this very moment I’m on my way from Loxley Alabama to Talladega Alabama with my husband. On the back of the truck we are transporting two nucleus of bees to our farm, where we’re growing lavender, sunflowers, herbs and vegetables for a hopefully very soon U-Pick operations. We just retired and are first timers on this, but have a nice piece of land that we want to help along to produce, bees are essential in our arrangement. Thanks to you I got inspiration and knowledge on preparing infused honey for self consumption and commercial. Keep up your great work, I’m a fan! Thank you!

Lovely Greens • Garden Living on the Isle of Man I like the other flavors too, but I believe vanilla will be my favorite as well, maybe because I have never tasted anything like that before, and it's unusual for me. I also wonder if this can be done with ginger? Eventhough I don't know how much percentage of water it has. And if I can make it well, I'd love to prepare another jar to give it as a gift, for sure. Tell us how much do you like it once you try them :D Keep up the great work.

Lovely Greens • Gardening, Beauty & Beekeeping here in India we use honey and ginger for cough. Works wonders with kids. Warm a spoonful of ginger juice and put some honey in it. That's it!

i live in India and my mum and dad have bees at home and well, normally you would expect to see bee hives only in farms or else where in India and not in cities or other areas in India and i actually am glad that though i live with my parents in the city, i am lucky that my mum and dad have got a garden in our house..... and well it's not very easy for us to take care of the garden now since my mum and dad are in their early old age (a.k.a: my mum is 65 and my dad is 76 years old) and they actually look after the whole garden on their own and well i don't know the head and tail of gardening and we also have neighbours who are actually very jealous that we have a large place and to be honest the thing with the typical Indian person living in India is that if one has a plot of land, one just uses the whole darn thing to make one's own home and never think about keeping plants at home or build apartments that one then rents just to get more money....... but we do get jealous when we see another person just having a beautiful garden and we try to wish bad on them because we just end up getting jealous.... and it's been a huge problem in my parent's case because the minute the neighbours got to know that my parents had bought a flat in an apartment, they started to ask my aunt, who is my mum's youngest sister and also my next door neighbour, questions about whether my parents were selling their home just because they actually wanted to buy it and then build multi story buildings on the little land that we had..... and of course my aunt actually asked these neighbours if my parents told them that they were selling their house and garden? and at that the neighbours just laughed and said "No no, we were just curious since the Cornels have now got a flat..... we were thinking if they would be selling the land and going to the flat.... and please don't tell them that we asked or said any thing on this topic"..... so yes, it is hard in our Indian sub urban life..... Anyway, my mum and dad have two bee hives.... but recently one of the bee hives was attacked by the Wax Moths and thus we lost one hive to them (the moths)..... but the other one is next to our mango tree and it's been doing well..... we get plenty of honey and my parents have even been featured in our local daily English news paper..... my parents are also into bonsai work..... they regularly check if there are drones (a.k.a: male bees) and if there is a new Queen Bee chamber and that's when my parents keep the second bee hive ready........ and well, my parents don't sell their honey since my mum uses the honey in her Rich Fruit Cake which she makes during the Christmas season and she makes A LOT of cake mainly because we send it to my elder brother and his family in the U.S.....

I would recommend a bucket with a honey gate on it. It would save you allot of time.

Hey. Loved this video 👌 got to know so much that I needed to. Just one question; is it a must to strain out the infusion ingredients like Cinnamon? If so why?

You could probably leave the cinnamon and vanilla in but any softer plant material probably needs to make an exit. The lavender might overpower the honey if left in for too long and any green herbs that aren't 100% dried can go off. Enjoy your homemade infused honey!

Cupcakes with honey drizzled on top sound delightful!. Now I need to head to the cupboard to see if there is any honey left! Ouch bee sting hand I'm glad you're not allergic to them. Great diy projects.

Ever made pickles out of watermelon rinds? Good video i have only a few hives and a 40s 2 frame extractor.. one thing around here is a ton of lavender.

Wow, that would be an interesting colour afterwards. I've not tried it myself but I'd go for 1/2 tsp to start with.

I hope u see this to answer it but i seen lots of video of people adding a little water with there preservative to make a tincture. Is this the same? If so then would it matter if you used fresh herbs with a little water thats in it and the rest is honey? I hope u understand my question

I went to a beekeeping presentation once by an experienced Beek from Ireland. He claimed that eating a jar of raw honey a week kept the people in his family living healthily way into their 90s!

what to do with all the empty pails ........ seems honey pails are the same every were ........ thinking on taking a hobby in cheese making appears it uses alone of pails ......... just love honey benefits

That's actually not an original honey pail -- it's one that was filled with Epsom Salts for my other business (I make handmade bath and beauty items). I reuse food grade buckets to put my own honey in though. Whenever you come by one, save it for your hobbies like cheese making.

my beek won't refill or reuse pails........ always have not like that about him however; enjoy his quality product ........ a bit of a cleanly free me thinks perhaps not a bad thing .......... i have mason preserving jars 20 years old and i live to tell the story moreover;either ifind a reuse for the pails or stack them to the ceiling for now .......... sincerely pail stacker

So I would like to sell Rosemary Honey at my farmers market. My neighbor has raw honey that I would like to use and I have plenty of rosemary in my garden. If I Dehydrated my rosemary but I still chop it up afterwards and could I leave it in the honey or should I remove it before I sell it?

You can leave it in the honey but all of the pieces will float to the top. It's not an attractive presentation and may affect sales, especially with potential repeat customers. What I'd do is infuse the honey with rosemary, sieve it out, rebottle, and place a single dried sprig of rosemary in the jar.

If you wanted real lavender honey you will need to harvest it from a hive near a lavender field. That's be much better.

Do you find there's a limit to how long you can leave the lavender petals in? Do they ever go bad? (I know the honey won't...I'm a beekeeper too!)

Hi Kelly and as long as they don't float to the surface, you can probably leave them in indefinitely. If they float up, they will eventually begin rotting though. The moisture in the honey (or fresh lavender) plus air isn't a great combination.

@@Raenhubb I used dried and it worked fine. I just turned the jar upside down once a day or so and let the dried petals work their way to the other end. A slow mixing of sorts.

@@Raenhubb I strained them out after 2 weeks. The honey now has a very subtle lavender flavor that's really nice. I think next time I'll try to push it to 3 or 4 weeks, but not much longer than that.

Using extract would create a brownish-tinged blend, rather than an infused honey. Infusing means placing an aromatic in the honey and allowing the flavor to infuse before taking it out.

Ok, hopefully people see this when they watch this video. If you put fresh herbs in honey it WILL ferment. You eventually will end up with a small explosion if you don’t burp your jars. You can also heat the honey to a boiling temp for three minutes to sterilize it and stop the fermentation process. Then you strain out the remaining plant material and you have stable honey again. Fermented honey isn’t bad for you if you’re a healthy adult, but it can result in a mess you didn’t realize was in the making or just a fermented product you weren’t expecting. ✌️

This isn't true for dry herbs like rosemary and lavender. You'd have to add a lot of wet herbs (basil, mint) for fermentation to occur. And then what happens is that the jar lid can bulge a bit as fermentation happens inside over a matter of weeks. No explosion though, sorry :)

@@Lovelygreens yes the honey sugar will absorb its moister and will not reach the point of fermentation because the ratio of water-to sugar would still be in safe zone.
