How to Make Hiker's "Logan Bread" for Portable Nutrition and Sustained Energy

How do you like to make yours? Please share! Here is how I make it and what you'll need:
LOGAN BREAD
1/2 cup Hot Water
1 cup Oil (Organic Non-GMO Canola, Olive, Coconut, Ghee) amzn.to/3b6H65k
1/2 cup Raw Local Honey amzn.to/3jL1jBn
1/2 Molasses amzn.to/3pbUfyJ
1/2 cup Chopped Dried Cherries amzn.to/3pbUp9j
1/2 cup Dried Cranberries amzn.to/3ph0XUm
1/2 cup Chopped Pecans (or other nuts) amzn.to/3pdGL5D
4 eggs
1 cup Whole Wheat Flour amzn.to/2LKPdM2
1/2 cup Chia Seed amzn.to/2Nk9Xuw
1/2 cup Milled Flax amzn.to/3tWoTzJ
1 cup Oatmeal amzn.to/3jK2HEh
1 cup Wheat Germ amzn.to/3jJJLp8
1/2 cup Powdered Milk amzn.to/3d6NeNt
1/4 cup Dark Brown Sugar amzn.to/2NnCqzs
1.5 tsp Baking Powder amzn.to/3jGDhYk
1 tsp Salt amzn.to/2Nkokir
Pre-heat oven to 280 degrees Fahrenheit or 138 degrees Celsius.
1. Stir Water, Oil, Honey, Molasses, Cherries, Cranberries, Pecans, and Eggs together in large bowl and set aside.
2. In another large bowl, stir Flour, Chia, Flax, Oats, Wheat Germ, Powdered Milk, Brown Sugar, Baking Powder and Salt together.
3. Stir the first bowl into the second bowl until all ingredients are well incorporated.
4. Spread in a 9x9 baking pan that has been lined with parchment paper or oiled and sprinkled with flour.
5. Bake for 80-90 Minutes. Let Cool. Cut into 3x3 Inch Squares. Wrap tightly in parchment, and Foil, and place in Snack Sized Sandwich bags.
6. Store in the refrigerator for up to 4 months.

To keep the honey and molasses from sticking to the measuring cup: measure the oil first. The leftover coating of oil will let the honey or molasses slip right out of the cup. No scraping!

I use 'curse words' (we call it swearing) frequently in my everyday life, online and off. They are part of how I express my frustrations, joys etc. I make no apology for that. With that said, I love your calm, carefully worded, 'curse word' free videos. I love the way you never raise your voice. It's soothing. I wonder if you've been sheltered from the darker side of life? Or if you had a sturdy, reliable, safe, dependable upbringing without fear, insecurity etc? Thankyou for sharing your calming influence and practical knowledge. I find my voice is softer and my swearing reduced after watching any of your videos.

Just WOW... this appeared in my recommended list today. I’m not a hiker, nor a prepper. But today, my daughter-in-law’s father passed away from Covid. He was an amazing Christian, a beautiful soul, and a wonderful role model and father. My heart is broken for the family. Your scripture at the end was so perfect and poignant. Looks delicious. I have been a backpacker for more than 15 years and have NEVER had Logan bread. I am going to try it. With the flavor profile you have going, I might add a little bit of ginger. Gingerbread is my favorite bread-like flavor and I think it would be great in your recipe. Thanks for sharing.

Never heard of Logan Bread, but you can bet I'm making it tonight. However without the wheat & no Canola Oil. Substitutes are Gabonzo flour, Applesauce, & Oat bran. I'll let you know how it turned out.

You are right! Canolo oil is a lie from the enemy ...please research this at NaturalNewsDOTcom and use their search engine at the to right.. There's a reason canola oil is in EVERYTHING!... NOT because it is good for you but because you can't taste it. I want health not lies..... do your research if you are eating this~

I make a similar bread using fresh ground wheat, rye and oats with corn meal and pecans for the dry ingredients. Instead of cherries I use Ocean Spray Craisins, dried apricots and dried blueberries. For the wet ingredients I use honey, black molasses (sometimes I use maple syrup) and a couple of eggs. I have not used milk but will try some the next time I bake it. Sometimes I make it without the baking powder and they turn out similar to a dense energy bar instead of a dense cake. When I make them without leavening I will double bake them to drive off as much moisture as possible and then I vacuum pack them in small Mylar bags. I have not tested how long they keep but they last a pretty long time when packed this way.

You can rum it after it baked and cooled to moisten it slightly. The alcohol will prevent even more microbial growth

Great tip, when you are using sticky ingredients, brush the inside of your measuring cups with oil, it slips right out.

Saw this video yesterday and went shopping for the ingredients I needed today. I skipped the cranberries, doubled up on the cherries, used walnuts instead of pecans and voila!!! Logan bread! This is a very good recipe 👌 😋! Thank you for sharing.

I love the inspiration at the end of the video. I am surprised at how much you resemble my grandmother who she said was of Cherokee, Choctaw, Scotch- Irish and Jewish ancestry, also known as "American." She she was a great cook and baker. I never saw her look at a recipe or open a cookbook. It was all in her head! I wish she had written some of the recipes down. Great video, I am subscribed. Thank you.

I would let the assembled batter sit overnight before baking, as that will get rid of the phytates in the wheat, oats, and any other grains in the mixture. then it will be even more amazing-smelling!

What Is Phytic Acid Used For? Phytic acid is an antioxidant. Antioxidants help to remove free radicals from cells in the body. These are the highly reactive byproducts of cellular metabolism. Left unchecked, free radicals can contribute to the development of certain diseases and cancer. Foods containing phytic acid are nutrient-dense, overall. For most people, these foods are important to include in a healthy and well-balanced diet. Cancer Studies have shown phytic acid may protect against certain cancers. Phytic acid may be particularly protective against colon cancer by suppressing oxidative damage to intestinal cells.2 Oseoporosis Studies have shown that phytate consumption appears to have a protective effect against osteoporosis. Studying postmenopausal women, those with lower amounts of urinary phytate (indicating less in the diet) were at higher risk of bone loss and hip fracture than women with higher urinary phytate (indicating more in the diet).3 Another study found the differences were more marked when comparing women who had greater risk factors for osteoporosis. For these people, a diet higher in phytate may be even more important to help reduce their risks of bone loss and fracture.4 Possible Side Effects Phytic acid is known as an anti-nutrient because it blocks the absorption of certain minerals, such as iron, zinc, calcium, and manganese. Some things can reduce the likelihood that phytic acid will cause mineral deficiency: Soaking, sprouting, and cooking foods Eating a balanced diet The mineral-blocking aspect of phytic acid occurs during a single meal and does not happen cumulatively over the course of a day. That means that phytic acid-containing foods may impact the absorption of minerals eaten in the same meal, but will not continue to impact minerals in subsequent snacks and meals throughout the day. People who have an existing mineral deficiency should pay attention to how much phytic acid they consume. If you have a mineral deficiency, you may benefit from the support of a dietitian or a healthcare provider to suggest the proper foods, when to eat them, and whether supplementation with minerals is recommended. Dosage and Preparation Phytic acid is not typically taken in supplement form. Instead, your source for phytic acid is in the food you eat and the food choices you make. There is not a Recommended Dietary Allowance (RDA) for phytic acid. A typical Western diet is relatively low in phytate with 250-800 milligrams (mg) of phytate. Vegetarians may have a higher intake of phytate. People in developing countries, whose diets consist of primarily cereals and legumes may have as high as 2,000 mg of phytate in their diet.5 What to Look For Phytic acid is naturally found in the following foods: Grains: Such as whole wheat, oats, and rice Legumes: Such as black beans, pinto beans, kidney beans, soy beans, peanuts, and lentils Nuts and seeds: Such as walnuts, pine nuts, almonds, and sesame seeds Tubers: Such as potatoes, turnips, beets, and carrots Cooking, soaking, and fermenting can reduce the amount of phytic acid in foods. Eating a well-balanced diet helps to ensure that you are not ingesting too much phytic acid. Because phytic acid is found in so many foods and because those foods are generally healthy and nutritious, it is not recommended to eliminate foods that contain phytic acid. As an antioxidant, phytic acid has some health benefits. Eating a well-balanced diet can both bring you the benefits of phytic acid and reduce the likelihood that you will consume too much and become mineral deficient. I’m gluten and dairy intolerant so I’ll be tweaking the recipe, as well. I bet 1 to 1 flour will work along with some powdered cashew milk.

Thanks for sharing this! I've seen Logan bread mentioned before and always wanted to try it. By following this video, I made a batch and I absolutely love them! The only change I made was pan size, my squares are smaller and more suited for day hiking than backpacking. Sooo good!

For anyone that doesn’t wish to add eggs (if you wanted a longer shelf life or didn’t like/eat eggs) - an amazing egg (and dairy) replacement or substitute, is *Aquafaba!* It’s literally just the viscous juice from canned chickpeas (or you can make your own, buy saving the water you soaked and boiled your chickpeas in). I’m personally not a vegan or vegetarian, but I learned about this ingredient from friends that are- and they use it in basically everything that requires eggs/whites! 🙃 Now it isn’t anywhere NEAR the nutritional powerhouse that eggs are, but if you wanted that additional texture/density to the loganbread, without it altering the shelf life of it - I highly suggest playing around with aquafaba until you find what you like best! ((The suggested “substitution ratio,” is generally:)) •3 Tablespoons (45 ml) of aquafaba (for one whole egg) -or- •2 Tablespoons (30 ml) for one egg white. I hope this is useful to someone and/or helps you with possibly turning other recipes into no egg/dairy versions (to prolong their storage life, or even give you a bit more variety in your hiking snacks!! ❤️😊)

Please note that Pecans are a high fat nut and have approximately 1/2 the pantry shelf life of Almonds. She has it backwards. If the nuts are frozen, the shelf life is about equal. Looks like a good recipe, I'll try it soon.

I am excited to see a Logan Bread video. My mom used to make this for long distance hikes. We would eat it for lunch so we would not lose day light. Haha she has not made it in many years and didn’t have an actual recipe to share.

Adding chlorella and/or spirulina powder would be a great way to pack some greens into the bread as well.

Looks so delicious. I do suggest using a better oil as Canola is not a good oil. If anyone is not sure do some research.

My melange/concoction is finally in the oven. It was real fun making it and raiding the larder and stores for various ingredients and discovering amazing alternatives (e.g. date syrup). Will let you know results tomorrow.

I had just picked up a bag of dried cherries on sale then saw your Video. Perfect timing I only had to buy some chia seeds. I substituted flax seeds for rye flour ( flax seeds and I do not get along 😁) . It came out delishious and very filling. Thank you for a great recipe. Will be putting these in our daypacks when we go hiking. I had to cook them 95 minutes as my pan is 8x8. I used the cup I measured the oil in and added honey half way then the molasses and the sticky combo slid out of the cup easily.

Great recipe can't wait to try it. Will offer a suggestion: When adding honey or molasses coat the measuring cup(s) with whatever oil you are using and they will pore out much easier.

Use kitchen shears to cut up dried fruit. So much easier than chopping with a knife. What a great idea for camping and household emergencies.

I always pour honey into the same measuring cup as the oil. It makes the honey just roll out (from the oil coating the cup).

How long would this keep without the eggs. Trying to find foods that I can rely on in the dry seasons if you know what I mean. BTW as always great video .professionally done and well presented.
