✅Ingredients
• Vanilla Extract: 4 whole vanilla bean pods (3 to 4 inch) + 8 ounces vodka
• Almond Extract: 1/2 cup raw unsalted slivered almonds + 8 ounces vodka
• Lemon Extract: 2 lemon rinds, peeled into strips + 8 ounces vodka
• Orange Extract: 1 large orange rind, peeled into strips + 8 ounces vodka
• Mint Extract: 1 cup loosely packed fresh mint leaves+ 8 ounces vodka
• Coconut Extract: 1/2 cup roughly chopped fresh coconut meat + 8 ounces vodka
• Cinnamon Extract: 4 sticks whole cinnamon + 8 ounces vodka

1️⃣ Prepare the raw ingredient(s) for extraction. For vanilla extract, use a sharp knife to split the vanilla pod open lengthwise to expose the tiny seeds inside.
2️⃣ Place the raw ingredient inside an 8 ounce glass bottle or mason jar.
3️⃣ Pour vodka into bottle to fill, leaving a 1/2-inch space between the vodka and the top of the bottle.
4️⃣ Place the lid on the jar to close. Let sit for 6 weeks, giving the bottle a gentle shake every 2-3 days. Be sure to store them in a cool, dry place away from sunlight.
5️⃣ The extracts will be ready for use after 6 weeks. If you'd like, you can strain the raw ingredients from the extract bottles. Extracts stay good for at least several years.

If you want you can wrap the clear mason jars in tin foil if you don’t have amber jars. That works too.

@@MSBowen-pk6ww when you use it in cooking the alcohol is burnt off, and you're only putting in a tsp usually in a recipe, so miniscule. Even if it's a no bake recipe there is nowhere near enough to get anyone drunk. Hope that helps

To get the most out of the vanillapods: - Use the seeds in a recipe - Put the leftover pods in a container with some sugar. A large pod can produce about a cup of vanillasugar. After a couple of weeks (shake every couple of days) it's done. - The sugar will have dried the vanillapods. But they will still be fragrant. If you end up with a lot of dried vanillapods they can also be used to make extracts, either use vodka or glycerine.

i have 4 pods in a 128oz container of sugar. I started in 2017. still extracting flavor after over a hundred refills when it gets to half. sugar is used as a curing agent afterall

You should try using bourbon when making vanilla extract. I use the Double Oak Jim Beam, as it aged in two different barrels to allow a deeper rich caramel flavor that I have never gotten from vodka. I feel that using a bourbon for vanilla extract yields a rounded deeper vanilla flavor which gives my baked goods an extra flavor that my family loves. Thanks for expanding my homemade extract recipes. I just started a bottle of cinnamon, orange, and almond extracts.

My wife and I made the vanilla extract and lemon. We will never buy them at a store again. Their just to easy to make. Next, we are going to make vietnamese cinnamon bark extract and mexican vanilla bean extract.

Try Sri Lankan cinnamon, aka Ceylon. It has a more floral flavour than Vietnamese, I love both of them.

Many of my recipes also start with 'a whole bunch of vodka', then end in getting take-away pizza. Anyway, nice vid. Try blending the vanilla and coconut; it is fantastic.

Everyone says you can use the vanilla beans over again, but they only have so much flavor to be extracted. You can reuse them, but your vanilla will be mostly Vodka. I've made multiple types of vanilla (Bourbon, coconut, and spiced) but I'm looking forward to trying orange, lemon, and mint, which I also use a lot and they're REALLY expensive.

Beautiful presentation; but I'm in a vanilla extract making group, actually a few. From what I've learned, it takes at least 12 MONTHS to make vanilla extract, not 6 weeks. Other extracts take much less time; like you said, a couple months; but vanilla is a year to year in a half long process. Thanks for the video. Just offering clarity.

I make the raw coconut but I also toast the fresh coconut to a golden brown before extracting. Toasted pecans, black walnut, almonds all add extra flavor.

Well I certainly laud you in your efforts. Extracts can be a bit tricky. I have made many over the years. My bottle of vanilla extract is the size of your Vodka bottle... and as dark as your amber bottles... in a clear bottle. Yes its over a decade old and soooo nice and smooth. Contrary to what was stated I have always heard the cheaper the better for the alcohol. And thats what I use. You can also use bourbon rum and others. I love love love my cinnamon extract. Made from Mexican cinnamon sticks. Turned the vodka a lovely brick red. And delish. Cinnamon cookies are so fabulous. You got the citrus ones down and dont forget grapefruit and lime. I would use much more mint to that jar... really pack it in there. And mint like most delicate leafy herbs can go bad quickly so I would switch to fresh mint as soon as it changes color. As I have explained on my fb page Amazmerizing the pure almond extract is not made with almonds it is made with noyeaux... aka freestone pits. Yes the little nuts inside of cherry peach apricot pits. I have a heavenly bottle of almond extract that is also years old. Glad you are doing these experiments. Many of these types of skills have been dying out. So thankful you are keeping the dialogue open and the art of extracting alive. Namaste ;)

A suggestion. Most people don't realize that the majority of vodka's sold today are actually made from cheap grain alcohol and not potatoes which is from what true vodka is distilled. You can find an excellent low priced, but highly rated potato vodka at Trader Joe's called "Vodka Monopolowa," imported from Austria. It varies in price from state to state at the TJ's, but for actual potato vodka is still usually cheaper than the fake vodkas made from grain alcohol.

Just make sure you use organic lemons and oranges. The stuff they spray on doesn't wash off. Other flavours to try: star anise, green tea or spice mix (cinnamon, clove, allspice, orange and vanilla for example)

I use neutral grain spirits which has a much higher alcohol content so you can dilute with distilled water to make same amount stretch further. I also use brandy or bourbon for my vanilla extracts, which gives it a rich, deeper flavor.

I hwve been taught to freeze the bottles ingredients for overnight as this will crack the cell walls of the plant material for great results the next day.

So let the ingredients defrost in the bottle with the room temperature Vodka? If so the water from the freezing won't affect the mixture.

You definitely want to be careful with that, certain herbs that are tinctured for 6 weeks will release volatile oils that can make you sick (in high quantity). If you want flavored vodka, for drinking, I would suggest not going longer than 1 week.

@@baronvonkaiser9912 There are a good number of herbs (peppermint in excess can be a problem)...in fact it's better if I just say ALL herb tinctures taken in excess will cause a problem. Best thing is to try a short soak of herbs and go from there. Start with a short amount of time and work your way up. I personally would taste test after an hour and go up from there incrementally. (1, 3, 5, 8, 10, etc hours).

Save the time and blend or muddle some real fruit (raspberries, strawberries, orange & lemon innards, etc.) and add it to the vodka. You can drink it straight away or experiment how long it takes to become undrinkable. :)

I make my own vanilla extract with bourbon. I have it in a big Mason jar with a bunch a vanilla beans and when it gets low I just pour in another bottle of bourbon.

I remember as I was purchasing a few bottles of Vodka & Bourbon to make my yearly extracts. The man at the counter said, Wow!! are you having a party? ME: No I'm infusing flavors together HIM: What? What? ME: I'm making flavored extracts. HIM: Making what? ME: Nevermind. Yes! I'm having a party. Lol, How many drinks has he had? @@nheinrich834 Cherries, Apple/Cinnamon, Peaches/Pecans, Coffee, Honey/Ginger, Caramel sauce, Pineapples, All infused in Bourbon. Next, I will make bourbon chocolate caramel pecan candy as well as a BBQ sauce. Thanks for asking!

i know you say you can leave the raw ingred in, but after a couple years will it turn rancide or does the vodka preserve the almonds, mint, rind and coconut?

Alcohol preserves anything. It prevents any living being from existing in high concentration, so no molds or fungi/yeasts.

Thanks for this video. I have made extracts before but using Everclear which is a powerful alcohol. I have never made almond extract but will do so now, since it is so expensive. I bought an almond flavoring and it is called Back Bay Trading Company. I really want the real deal though and choose not to use McCormicks. I have made vanilla, mint, coconut extracts and homemade Grand Marnier (orange), and Kahlua (coffee). All were most excellent especially since I aged them for over a year. Thanks again!

@@WindDancer435 most almomd extract is made with a relative plant seed like apricot seeds. For example McCormick does not use almonds. I do understand what you are saying since you're making it yourself. Just an fyi.

Not that I've found it just smells like almonds to me but I blanch and roast mine before slivering to put into the jar the flavor is way stronger and gives it a nice body in the background especially in cookies!

Regina Phalange my grandma used to keep them in if it’s one she used basically everyday lol. The others she didn’t used often she passed the extract thru a fine food drainer and discarded of the rest. But as you see in the stores..... they keep it all there.

When using oils you need to be careful as the addition of water can turn it rancid I believe. You can use dried herbs etc to the same effect. Vinegar is pretty much the same also.

My daughter makes these and gives them away as gifts.. She wraps her jars with black construction paper.. I've haven't purchased extracts, I'm sure in 15-16 years.. I can't wait to try the cherry, she's started. Thanks.

Making extracts is a great idea. I have two practical questions, though. First, those bottle necks you’re using look pretty narrow. I can see getting the mint, orange, coconut, etc. IN the bottles but how do you get them OUT? You can top the vanilla beans with new alcohol but what about the rest? You’d have to pull them out at some point. If you can’t do that, you’d have to toss them out, which seems impractical. Secondly, isn’t it best to use organic oranges and lemons so you don’t get nasty chemicals in your extract from the sprayed peels? I was wondering if you were going to say something about that, but I didn’t hear you mention it.

Vanilla extract in the store is made with the same method so it’s just like that, but far better quality. They tend to use cheap alcohol based.

Alcohol is in all the extracts. It is required to avoid spoilage. In cooking, the alcohol is evaporated but the flavoring remains. O

Vodka doesn't have a flavor, hence why it's used to make extracts. Like the others posted, the majority of the alcohol is lost while cooking.

Banana peels don't have quite the same taste as the banana itself, and if the banana is not completely ripe they'll leave an unpleasant astringent taste. I'd try using a very ripe, almost black banana, but I'm pretty sure it's not gonna work as well as the flavors in the video.

Hi, I always make my vanilla extract with glycerin ( food grade glycerin) every 100 ml glycerin for 1 pod of vanilla :) and it works great.

FYI - Most extracts are made with alcohol. So it has NOTHING ti do with drinking. The extracts are used for food unless you are making medicinal infusions. Google it.

check out "infused oils" basically, its pouring hot oil, any kind, over herbs, spices, fruits, vegetables, or any flavor you wish to use, then you let it steep for a bit, strain it and bottle it for later use. you can use cold oil, but it will take a bit longer for the flavors to seep into it

Not true, it is in the distilling process. The filter doesn't remove the heavy or very light alcohols. But if you like it by all means go for it.

Whoa, definitely not. Look for vanilla beans on Amazon or from Costco or Trader Joe’s. I think the total cost was maybe $20 for two bottles and the pods can be reused up to 3 times for a total of 6 bottles from the same pods.
