For the home barkeep: all of these are 90% of the way to being liqueurs. At the 8 week mark, you can strain the alcohol into a measuring cup, then put it in a large jar with sugar and water (equal volume of each to alcohol...so if you had 1/2 cup of alcohol, do 1/2 cup sugar and 1/2 cup water) and let it sit for another couple months before bottling. With some of these (like the vanilla and cinnamon) you can keep the solids and keep using them to make extract. Given that good liqueurs are very expensive (and the cheap ones are made with artificial flavors) this is a great way to save money. They make really nice gifts too!

Jennifer Allan I wasn't wondering if you could use these for liqueurs by diluting them with alcohol. Kahlua would like so good or a chocolate Kahlua. Mint bourbon. Make a batch of peach pit extract and a batch of almond for Amaretto. Grand Marnier. Spiced rum--make a batch of allspice and clove extract. Spiced port...

I also love making a thick vanilla bean paste. I used a thick, condensed sugar syrup with ground up vanilla beans and some vanilla extract. So delicious in gelato (I love the Ciao Bella recipe) or ice cream. Add to homemade marshmallows, frosting, cream cheese cinnamon roll frosting or donut glaze. Make a simple syrup and add some of the vanilla bean paste for coffee syrup that's also delicious in hot cocoa. You can also buy ground vanilla bean powder that's really good for vanilla bean paste. I bet you could make paste with Spleda, xylitol, and food grade glycerin that doesn't make your blood sugar levels rise. The vanilla beans taste sweet and don't have sugar, but they have to lot of fiber. Too much in a recil does get a bit grainy. I think soaking in the paste would prevent that, but the haven't tried it.

@@baldnproud Hi Mary: sure. A good example is limoncello, an Italian liquer made from lemon zest. You can put the zest of half a dozen lemons in the bottom of a qaurt mason jar. Fill it up with the strongest, plainest alcohol you can get. I use Everclear which is a very high proof vodka. Let that sit for eight weeks. Strain into a larger jar (I use a gallon jar or you could use a sun tea jar). Discard lemon peel.. Make a simple syrup of equal parts water and sugar, heated gently till the sugar is dissolved in the water. You want equal parts to your alcohol, so measure the alcohol and if you've got 10 ounces of alcohol, make ten ounces of simple syrup, add that to alcohol and let it sit. The longer the better. At least a couple of months, to smooth out the very rough flavors from the strong alcohol. Chill the finished product in the freezer. Serve on a hot summer's day. AMAZING stuff.

Mine too. My grandparents and parents lived through WW2 and rations. My dad's parents had a farm and they never had to sacrifice in the food department. Moms a town girl so they had to ration. Now it's our time.

My vanilla extract is 11 years old, not quite 25 like Ina’s! I recently participated in a cookie exchange at church and brought spritz cookies. Afterward someone who got my cookies asked me what was the flavor I used, they loved it. They were astonished when I told them it was my homemade vanilla. I’ll be gifting her a bottle for Christmas. 🎄

@Rona Mende NO! they are pretty well preserved in the alcohol; you just keep adding to it. My vanilla was started in 2013 and I sometimes even give it as gifts if I REALLY like someone ;-)

For anyone having trouble finding cacao beans, in stores they're often by the chia seeds and flax seeds (the superfood stuff) and they're commonly called Cacao Nibs.

Using that vanilla recipe will still be better than the store, but FDA guidelines for vanilla extract is actually 1 oz of beans for every 8 oz of alcohol. The size of beans varies immensely (I own some rare single beans that are .75 oz each), but more often you are going to get about 8-12 beans per oz. Because the weight fluctuates, the number of beans isn't a good indicator. If you don't use 1 oz of beans per 8 oz of alcohol, you are really just making vanilla flavored vodka (which I've also done before for making cocktails, and is wonderful, but isn't the same as extract).

Italian lemonade: simple syrup with fresh basil leaves, cool and strain, add to fresh lemon juice and water. Mint limeade: simple syrup with fresh mint leaves, cool and strain, add to fresh lime juice and water

I made vanilla extract a few months ago and I compared it to the real one. Wow there was such a difference. The homeade one had a richer flavor and I don’t know why but it came out kind of thick and I enjoyed it. Thanks you 😊

💁🏻‍♀️ I’m freaking out because I’m home alone, not speaking out loud, not looking anything up, just WONDERING if I could use my mint and vodka to make some flavoring. I sat down with my crochet, turned on RU-vid and up pops this!! 😲🤷🏻‍♀️ How crazy cool is that? And this was made 3 years ago!! 🤯 Mind blown. I paused at 3:44 & went straight to work making 2 jars of vanilla extract I was planning. I’ve never made extracts before but ordered the beans months ago & forgot about it until now. I’m so excited! Mary, it't best to macerate the coffee beans in a WINE STYLE, on a slant. The same for certain kinds of nuts and cocoa that tend to float to the top. Just lean it against something so the beans are farther spread out. I've had to do it this way each time I make certain types of Extracts. Also, all Alcohol burns off at 172 degrees F. so anything above that the Alcohol will evaporate off. It is better to strain through a few layers of Cheese cloth. I learned this by trial and error. It's cotton and very food friendly..especially if you are doing ORGANIC Extracts. I also prefer to use Cacao nibs when making Cacao Extract. With whole beans you have to crush them down a little to really activate them. The Nibs are ready to go. My Vanilla starter is from My mother,, from a few decades ago..and still going strong. She worked part time at Watkins, actually making their PURE vanilla, not the imitations. That's how she got started. I have had to take out some of the older beans and add in New over the years, but still fantastic product. Special NOTE: The fools who make Extracts in their Pressure Cookers are simply clueless. The very second they heat their batches over 172 degrees F, the Alcohol is evaporated off... with or without a cover. It is simply gone and all they have is a syrup liquid. That is why you want it to macerate and not be used in a "CANNERS" Method. It is simply irrational. *** Always love your videos... Rain's also.

Mary have you ever tried making extracts with oil? As far as the lemons you can cut them in slices put a layer of lemons and a layer of honey a layer of lemons and a layer of honey until you fill up a jar, leave it on the counter over night, in the morning you have a delicious syrup for your tea :) You will know it's a syrup and lemons released their juices because it will be much more fluid than what you started with, then you can close the lid and put in your refrigerator

Turned out quite nice. 😁 Marsala for chicken Marsala. A splash of rum in chocolate glaze makes a world of difference in the flavor. Amaretto in my almond cookies. Etcetera, etcetera. 🤣

Wow! I'm 66 and been cooking for 60 years but I never learned how to make perpetual vanilla extract. I have made vanilla sugar. Glad I found this channel.

Just found Mary and I am glad I did! I use Chocolate Extract in my Chocolate Espresso Cookies and Coconut Extract in my Coconut Layer Cake and the ones in the grocery stores are expensive and not always the best quality. Can't wait to get started! Thanks Mary :)

Mary, I just love your videos! So informative and wonderful. Love the comment about pith too. My Mom always said to eat the pith on the oranges, and the "butts" of the bananas. Turns out this is old wisdom and I'm glad you are keeping it alive. No one knows this anymore. Thank you for all your great videos and sharing your knowledge. Okay, I was interested because you said coffee extract and I have wanted to make a coffee soda (don't judge) but as I sat listening to your genius I came to realize something awful: I've been scammed! Why don't we learn these types of things in High School? I'm over fifty and I never knew any of these things! Like most folks I always rushed out to buy the tiny portions from grocery stores and paid too much! And then I rationed because EVERYTHING baked from scratch requires extract of some sort! I have fought with my own children over their using my precious drops of vanilla extract! And now to see that if I made it myself we could have been bathing in it...I think I need to lie down with a cool towel! (Also I need to wait for my order of vanilla and jars to arrive, lol!)

Don’t forget to label everything - especially with dates! Blue painters tape from the hardware store is one of my favorite kitchen tools. 😁 Great ideas! I especially like your use of canning jars. Easy to clean and reuse.

Pioneer woman has special little label for things. They're quite cute & have lines for easy writing. Only problem is a few months ago it went on clearance for $2 then recently it went down to 75¢. If you can't tell I've been watching the clearance aisle just to see if anyone has bought any. But apparently just like us people prefer to use cheap painters tape.😏 Because they've been sitting there for at 3 months.

I saw this video a couple years ago & decided I wanted to give homemade extract baskets as Christmas gifts. I bought a big bottle of cheap vodka ( bought another later on) and the rest of the ingredients. I even made a black walnut extract. I started this in May. I've been collecting the bottles & baskets to gift the extracts in and already have a bunch filled & waiting to go. I'm so excited to see the reactions this Christmas.

Sweet Mary...you are so clear and concise! Love your tutorials. In case you didst know....the pith (contains more vit c than the juice) can be dried and put in a coffee grinder. Makes an extra vit c shot in a smoothie or orange juice!

Great video so full of wisdom! I love the fact that you recommended letting the vanilla steep for 6+ months. I’ve seen some recipes that actually stated 4 to 6 weeks and knew that wasn’t near long enough for a quality product. Great tips on not wasting anything too. Girl after my own heart lol! I know we think so much alike and when you mentioned Heidi it made me smile. She has a great channel too. Both of you bring something great to the table ❤️. You just save me a lot of money. I love to bake, I bake several times a week and spend a lot on extracts. Especially vanilla. I live in the country so sometimes the grocery store is out. I stumbled upon your video by way of RU-vid's recommendation. It was fantastic. I have made a few extracts before (vanilla, and peppermint and anise using dried herbs from my garden) but I am very excited to try the others. As others have stated, I also am interested in suggestions for use. Thanks so much for your video!

Hi Heather, Thanks so much for visiting! Sounds like I need to do a follow-up on how to use all these wonderful extracts! Certainly baking is the first and most common use but extracts can also be added to homemade hot coffee drinks and other beverages - including smoothies. Extracts are also wonderful added to whipped cream, chocolate mousse and puddings to intensify the flavor. Extracts are also wonderful when used in pie fillings. And one other fun way is to add them to oatmeal or other hot cereals for added flavor. Hope this helps - but I will definitely do a follow-up video on uses and then decanting them as well! Thanks for the great tutorial on making homemade extracts. I’ve made vanilla extract for years but never really thought about making the other flavors. I’m going to have to start some of the others now.
