I tried this with beef chuck and used sheep casings, and smoked them. Fantastic hot dogs. Family craves them. Will be doing more and more.

If doing a all beef dog With sheep casing what do you need when boiling hot dogs in food cart so hot dogs do not break apart when hot?

Wow! I’m gonna try this. Dumb question: I don’t have a smoker, and I wonder if liquid smoke would work?

Do you smoke landjagers using the same process?

Hi Carl, we recommend a gradual smoke process on landjaeger. We typically use the below schedule: Dry at 120°F with no smoke for 30 minutes Smoke at 130°F for one hour Increase temp to 150°F for one hour Remove smoke and increase temp to 170°F until internal temp reaches 155°F

How many grams is "half a package" of the seasoning and the maple cure?

Well the package is .95 lbs, so it would be about 491 grams, divided in half = 215.5 grams. You can also measure out seasoning and cure per pound of meat. For this seasoning it's 2 Tablespoons seasoning and 1 3/4 teaspoons of maple cure per pound

@@PSSeasoning Sorry, I didn't look at the package close enough when I got it. Is on the bag! 431 grams for full bag and 215.5 for half is correct. Might make these this weekend. Thanks again and..Cheers!

What causes inconsistencies in hot dog coloring

Hey Jeff, is the inconsistency on the inside or outside? If on the inside, it likely wasn't mixed long enough to get even cure distribution. If it's on the outside, it possibly wasn't dry enough before smoking. Let us know!

@@PSSeasoning yes it was color on the outside of the hot dog, I removed from refrigerator and let air dry for about 45 minutes then went into the smoker and set smoker to 120 with the door slightly open and they went for one hour then went into my smoking phases.
