Bacon is delicious and even better when you make it from scratch. This is a sweeter style maple flavored bacon that goes really well for breakfast, but is also at home on top of a juicy burger. This video outlines the steps and the math behind making really good bacon.
Recipe:
1 Skinned Pork Belly
2% of the meat weight in salt
2% of the meant weight in maple sugar (You can go less if you'd like)

Hi 👋 quick question. Can I cold smoke the belly after curing and rinse? Do you have an opinion on which is better? Thanks so much for the great video!

I don't suggest cold smoking because it increases the chances of food borne illness, but there are lots of people who do it.

Looks delicious! Quick tip for anybody who gets pork belly skin on I find it easier after the curing process. Also if you use the proper amounts of salt should be no danger of cold smoking no matter how you do smoke it it's better than anything you get at the store!

Does the cure get through the skin or is it in there long enough that it comes clear through from the other side?

@@GrillTopExperience I believe it does penetrate the skin but that's probably over my head to give you an accurate answer. I've never had a problem with uncured spots in my bacon I have made quite a bit this way. I use pretty much the same technique you did for curing though I normally let mine cure for 10 days just to be safe. After curing everything firms up and as much easier to cut off the skin. Someday I'm going to try making rind on bacon

@@GrillTopExperience I had some thin bellies a couple of times so I cured with the skin on. They say the Cure doesn't penetrate the skin so I cured 12 days for thin bellies. Hot smoked with skin on and trimmed off while still hot. Was good but next time will try skinning after the cure.

Using maple sugar sounds like a good variant. I may try it some day. I don't typically use the whole slices for breakfast so I don't know how it would pair when mixing it with eggs and potato or something else. I'm sure it wouldn't be bad though! :-)
