4 table spoon apple cider vinegar
1 tsp tempe starter/rhizophus mold
And some plastic ziploc and banana leaves for wrapping

Hallo Wati! I have just made my first batch of Tempe, and it didn’t turn out well, so I’m hoping you can give me some tips that will help me correct my method. After 48 hrs there is mycelium growing but not enough to hold the unity of the rectangle into a firm cake. I followed your directions exactly, and as you did, made them both in plastic and daun Pisang. The leaf bundles came out better. This lead me to think the beans were too wet when I packed them up in the plastic bags. I put lots of holes in the plastic bag. My oven thermometer says 105 degrees Fahrenheit with the light on, kept that temp throughout. I used Ragi from Java, not the American brand. I wanted to eventually make a lot of Tempe so I bought a large bag of starter that was vacuum packed , purchased from a reputable import co. I used 2 tsp ragi to my 400 gm soy beans (raw dry weight) . I thought it cannot hurt to use a little more since the effectiveness of ragi may vary. Now I wonder if it was not enough? Any thoughts on what could be wrong? Also, can I redo this batch by rinsing the beans again, drying more this time and adding more starter? Thank you. Leslie

Hello Leslie, Firstly, thank you so much for watching our video. We're sorry that your first trial of making tempe didn't turn out as supposed to be. But please don't be discourage, this is your first trial, don't stop, keep practicing. Like they said "Practice can make perfect!" Several things that I can think of why your tempe didn't turn out firm. Firstly, was the soybean cooked enough ? Because if the bean is not soft, it's hard for mold/ragi to grow to hold beans together. Secondly, was most of the skin off from the bean? Because the skin can prevent also the mold to penetrate the beans. Thirdly, you are right about water, too much water in the bean can interfere the mold to grow. So, make sure to pat the dry. And also you want to pack the soybean well in the freezer bag or daun pisang, you don't want too much space. And very important also to keep in mind, make sure the beans and all utensils, the freezer bags and daun pisang are clean, not contaminate by any salt. Because salt can kill the mold (ragi). And the temperature is little bit tricky too, range between 85 to 90 degree Farenheit. If it's lower than 85 the mold may not grow. Conversely. If it's too hot the spores may die. You mentioned your oven temp is 105 with light on, check if the light of, if it's 90. You may incubate the tempe with light of. Regarding the ragi/starter. I used either one, from Indonesia or US brand, they are all good. All is work for me. Again Leslie, I encourage you to keep practicing. I am very sure you can make the tempe you like. Why is your tempeh moist when putting it in the bag? Doesn't this make more difficult to grow the mould? Or maybe destroy it altogether? I thought soybeans should be totally dry when putting the starter in. And what if we don't dehull the beans?Will the tempeh become black? Thanks!

Hello anambivalentenemy, the plastic bag won't destroy or prevent the mould to grow as long as you make several tiny holes in the bag and right temperature. When do you start seeing the spores? I have had mine almost 24 hours next to the boiler and so far I see nothing... I am not even sure that it has the right temperature..but seems similar to an oven light.

Mine grew white fuzz within a few days on top the refrigerator, when the white fuzz attempted to collapse then I put it directly into the freezer, lay the beans out after putting/stirring in the vinegar to cool and dry, then stir in inoculate and shape into cake, I reuse tofu square tray and put that into zipper bag with toothpick holes to keep out bugs.

My tempeh is pinkish in color at the corners. Is it still edible? It smells nutty. Please advise.

You don't need to remove skins from beans... in fact, if you leave them on, the beans cook a little faster and are a bit creamier 😊

Hello Maria, Firstly, thank you for watching our video. And hope subscribed to our channel too. Your question is why your tempe turned black. You are right that too high temperature is one of the factors of the black spots on tempe. If your oven is already about 90-95 degree Farenheit. You don't need to turn on its light. Another factor also could be the quality of starter. You should use good quality of tempeh starter. Not good quality of starter will effect on your tempeh quality too, one of them is the appearance of black spots. And also black spot of your tempeh is caused by the oxygen intake which is too much. You can solve this by covering your tempeh thoroughly so that the tempeh is not exposed to the air directly. Or when you put in the plastic, make sure not to make too many holes. Don't discourage, don't stop Maria. Good luck for the next try. Have fun cooking!

Hello Nagarani, am not sure if yeast for bread can help for permentation process. But this mold or tempe starter is easy to get though on line :)

Vinegar is only to adjust ph for better mold starting, tangy sour is dependent on what beans and how it is prepared for eating--

Thank you for your question: Pretty much the function of the Apple cider vinegar is to glue together the beans as the mold grow in the process of fermentation.

The vinegar creates an acid environment which encourages the proper mold to grow and prevents the wrong mold from taking over.

Can not without starter...because the starter is ingredient that make the soy glue together and make the taste better.

You won't know what kind of mold you got then, we're not making wild yeast bread, starter gives that one strain a better chance to get a good foothold before other molds can get started, but it can be done, which is beyond my knowledge so I tried to get the best trusted supply I could find, very happy too.

Hai ...aq dr solo..gak usah bikin...disini tempe besar cuma 1rb rupiah.. hehehe ..dan yg kecil bisa dapat 8 biji...btw...tempe paling enak yg dibungkus daun pisang. Gak tau knp pokoknya rasanya lebih enak ketimbang yg diplastik

Don't worry, increase the Tempe starter, may be your Temper starter is not as powerful as hers. My 1st attempt also didn't turn out good, so the next batch I doubled the Tempe Starter. It turned out so good ! I used someone else recipe but hers also the same. So double the starter and it will work ! Happy Cooking and Happy making Tempe.
