Ingredients:
4 cups roasted or honey roasted peanuts
1 can sweetened condensed milk (14 oz)
1 package of mini marshmallows (10-12 oz)
1 package of peanut butter chips (10 oz)
1/2 cup peanut butter
1/2 cup salted butter
1/2 tsp salt (optional)
Directions:
Line a 9x13 inch baking dish with foil. Spray the foil with nonstick cooking spray for easy removal later. Sprinkle half of the roasted peanuts (2 cups) evenly into the prepared dish. Set that off to the side.
To a pot on the stove over medium heat, add in all of the remaining ingredients. For me, it took a total of 6 minutes to melt everything down. Be sure to stir frequently so nothing burns. Once everything has melted, to ensure it firms up later, let it continue to cook for 1 additional minute.
Remove from the heat and carefully pour the mixture over the peanuts in the prepared dish. While the mixture is still hot, evenly disperse the mixture. Once you have a nice flat surface, sprinkle on the remaining 2 cups of roasted peanuts.
At this point the peanuts are sitting on top of the mixture. Grab a piece of parchment paper and gently press the peanuts in.
Cover and refrigerate for about 3 hours. You can check it at 1 hr in, but chances are the center won't be fully set, perhaps even still warm to the touch. Mine needed 3 hrs to fully set.
Once your candy has set, remove it from the baking dish and turn it out onto some parchment paper. Remove the foil and slice into strips the width of a traditional candy bar. Wrap in plastic wrap, store in the fridge and enjoy!
