Lychee Girl made this honey lemon ginger jar and make tea out of it. In Asia, ginger is said to be nutritious, help improve our immune system, and fight against the cold and flu? But of course, washing hands and shelter in place are still the keys.
It's good with cold soda water as lemonade or with hot water as lemon tea.
It's great as a gift as well!

7 lemons
baking soda
coarse salt
sugar/honey (1:1 weight ration to sliced lemon)
containers (jar)

1. put a jar upside down to a pot when water starts boiling.
2. when the jar is full of steam, take it out and dry it completely.
3. rub the lemons firmly wit coarse salt.
4. wash the salt away with water.
5. rinse again with baking soda.
6. pour water on lemons with baking soda still on them.
7. leave the lemons in water for 10 ~ 15 minutes.
8. wast the baking soda away by rolling the lemons on hot water.
9. Slice the lemons as thin as possible.
11. remove the lemon seeds and throw the bits with lemon pith.
12. weight the sliced lemon.
13. prepare the sugar with same weight.
14. put sliced lemon in a bowl and add sugar in 3 steps. (But leave some)
15. Mix sugar and lemon after each step and leave the mixture on room temperature for 30 minutes.
16. put the sugared lemon to completely dried containers.
17. Use the remaining sugar to create sugar ceiling and seal the container with wrap before closing the lid.
18. mature it on room temperature for a day and extra two days inside a fridge.
* put gloves on when rinsing as coarse salt may hurt your hands.
* bitter taste may come out when too less sugar is used.
* lemon pith and seeds make bitter taste so make sure you removed them.
