Perfect timing, were doing an irish coffee tasting event at our uni soon :D although we thought of doing it "raw" so to say, just coffee and whiskey. You guys have any suggestions for recipies? We used Hoffmans aeropress and your aeropress espresso recipies and they worked pretty good

Nice! The cream makes the drink a little smoother and that cold/hot sensation is quite nice. I can understand why you want to make it raw though. I think you are okay with recipes, what will make a bigger difference is coffee/whiskey pairing, perhaps also experimentation with different sweeteners that balance the spirit.

Why don't you use cold milk and mixer for nescafe? It gives good results as well
