This has got to be one of the easiest cakes to make and no tools required. Yogurt is a classic addition to make cakes soft, fluffy and extra moist. I used unsweetened Greek yogurt for this recipe, but you can use unsweetened plain yogurt too. Lemon juice and zest are a good addition to add flavor and the hint of tanginess makes the cake so refreshing and delicious.

NUTRITION INFO PER SERVING (COCONUT FLOUR)
Total Carb = 1.6 g
Dietary Fiber = 0.4 g
Net Carb = 1.2 g
Calories = 104
Total Fat = 9.1 g
Protein = 4.3 g

NUTRITION INFO PER SERVING (ALMOND FLOUR)
Total Carb = 5.3 g
Dietary Fiber = 2.1 g
Net Carb = 3.2 g
Calories = 220
Total Fat = 18.4 g
Protein = 8.4 g
DRY INGREDIENTS
Coconut flour = 60 g / 1/2 cup (OR Almond flour = 240 g / 2 cups)
Baking Powder = 8 g / 2 tsp
Monk fruit = 50 g / 1/4 cup (OR any keto friendly sweetener.)
Zest from 1 lemon
A pinch of salt
WET INGREDIENTS
Unsweetened Greek or Plain Yogurt = 160 g / 2/3 cup
Eggs = 3 large whole eggs
Coconut Oil = 60 ml / 1/4 cup (You can also use olive oil or melted butter)
Fresh lemon juice = 15 to 30 ml / 1 to 2 tbsp (In the video, I used 15 ml but if you prefer a stronger lemon taste, you can add up to 30 ml or 2 tbsp)
Vanilla extract = 1 tsp
DIRECTIONS
1. Preheat the oven to 325 F or 170 C.
2. In a bowl, add all the wet ingredients and whisk until well combined. Set aside.
4. In another bowl, add all the dry ingredients and mix until well combined.
5. Add the wet ingredients into the dry ingredients and whisk until well combined. The batter is thick and smooth.
6. Pour the batter in a greased pan lined with parchment paper at the bottom. In the video, I used a 6 inch or 15 cm round pan with a removable bottom. You can also use a spring form pan. Spread evenly.
7. Bake at the middle rack for 30 to 35 mins or until cooked.
8. Cool completely.
9. Dust with powdered sweetener (optional).
10. The cake can be kept at room temperature for a few days provided you have a cool climate. Otherwise, it's best to refrigerate earlier up to 1 to 2 weeks.

Today I just baked my cake from almond flour by your recipe. Right for new year Eve and so grateful to you! It came out exactly like you show! I cut it in two parts and put some cream on. So delicious! I used 330F and 60 min.

WOW- I exchanged the flour for part almond meal, part cornflour and part gluten free flour (almost equal) because I can't eat so much nuts/seeds due to Arginine. It looks and tastes amazing! I frost it now with a keto cream cheese frosting from another recipe because it's Mother's Day. Happy Mothers day everyone!

This looks yummy! What I like about your recipes is that you make them so simple and yet so yummy looking. I have a bag of coconut flour with which I didn't know what to do. I will give this a try with coconut flour.

Tried and tested. It tastes so good. I have actually not cooked with coconut flour before and am new at all this. It tastes like I added desiccated coconut to the mix. Yum! The lemon flavour is wonderful! Not as deep as this one. Didn’t rise as much. No idea why. I did have it in a 20cm pan though but I still feel like it wouldn’t have risen even if it was in a smaller one. 🤷🏻‍♀️ Still tastes great!! Something guilt free to have with a cuppa so I’m a happy woman 👏🏼😁👏🏼

Imade this today & just had a piece... Omg...it's so so good & lemony & fluffy.....I love lemon so I made it with lots of lemon (2tbsp)😋😋 This is fantastic Elsie. In the oven now! I see some people say their cake was too flat and other issues- Please tell us at what altitude you live. Depending on altitude where people live : Baking at High Altitudes 1-Air pressure is lower, so foods take longer to bake. Temperatures and/or bake times may need to be increased. 2- Liquids evaporate faster, so amounts of flour, sugar and liquids may need to be changed to prevent batter that is too moist, dry or gummy. 3- Gases expand more, so doughs rise faster.

Thanks it's so easy and delicious. Was rather nervous it will be dry since the mixture was rather thick but it's not! I divided into 3 small cakes. 1 made it extra lemony, another 1 with blueberry and last with dark chocolate chips. Air fried as usual and happily devoured all flavours hahaahha

This looks delicious! I love that you make and add both coconut flour and almond flour versions for people who prefer one over the other. For me, I am more into coconut flour recipes! Do you think you could make a caramel filled cupcake made with just coconut flour? Like have the base as vanilla but then filled with caramel and topped with caramel/vanilla frosting? That would be epic 😍

I finally decided today was the day to make it. I followed the recipe with coconut flour. For some reason my cake didn’t rise up at all, but it still got a nice crust on the bottom and tasted good. Next time I’ll try to make almond flour version.

Some coconut flour are more absorbent than others so you may find the batter is much thicker. Hence, it may affect the baking. You can try to change the brand to get the one with the right consistency. Glad it still tasted good and thanks for your feedback ❤️

For a 9 inch pan, I assume you will be doubling the recipe. Baking time may be 40 to 50 mins. Just test with a wooden skewer.

Thank you for sharing this amazing cake, I personally love lemon and Greek yoghurt. My only issue with baking it is My oven, my baking cooks from the sides and the top but the middle and the bottom stays uncooked ( my oven it is a freestanding oven cooker and it is gas), I would be so great full if you have any tips that can help me please. Preheat your oven for 10 to 15 minutes at what ever temperature the recipe requires before you put the cake in.

Yes you can. You can also replace the yogurt with sour cream, whipping cream or coconut cream.

I just made this. My mixture looked a lot thicker than yours so I hope it turns out. Maybe I shouldn’t have used butter instead of coconut oil 🤷🏻‍♀️ I shall let everyone know the outcome in about 1 hour or so when it cools down enough for me to try some 👏🏼👏🏼

Frankly I have not tried that so am not sure. Orange is not keto friendly due to higher sugar content but if you're not counting carbs then you could try it 😊

Not sure if I did something wrong, but my cake is about 1/2 inch thick--nothing like the fluffy slice of cake in the picture. I only used 1/2 cup coconut flour so I’m not surprised. But what should have made it fluffier??

What is the size of the pan you used? This recipe is for a 6 inch pan which is quite small so if you used a bigger pan, you need to increase the recipe

Coconut flour is very absorbent hence need more eggs and liquid. It will bulk up after absorbing the liquid that's why only a small amount is required.

Just my humble opinion, weighing is fantastic. In Australia our weights are so different from American etc which is dangerous because the end result can be awful. So please continue with weighing, much much better. Cheers Rosemary Perth Western Australia (70 yrs)

I followed this recipe to a tee, but mine was flat. I barely rose more than an inch. It still tasted good (maybe a bit too oily). I’m wondering what I did wrong ?

You can try to increase the baking powder by another tsp. May I know what pan size you used?

@@lowcarbrecipeideas I used a 20cm pan, and I knew that this would result in a slightly flatter cake. But mine barely had any rise. I might need to use less oil perhaps. I’ll definitely try the cake again, as I had many compliments from my family who tasted it 😋

Hello there, I found out that I hate the taste of anything with almond flour and I'm using cocoa powder to make it bitter and eatable. Do you know any other natural stuff to blend it with?

This recipe uses coconut flour. Almond Flour is just an option.

Look into lupin flour. It's the new big thing in keto. I sub 1/4 of almond flour in a recipe with lupin and the taste is so different, so much better. Search on RU-vid, many keto channels are using it now. Or google keto lupin flour recipes. ResolutionEats and lowcarbinspirations have some. It's made from legumes and is only slightly higher in carbs than almond flour. Can sub equal with almond flour. I only use both to use up my almond flour because I'm sick of the taste too.

You can replace yogurt with sour cream, whipping cream or coconut cream. If your coconut milk is of thick consistency then you could use that but if it's diluted then you may need to reduce the amount until you get the right consistency

Frankly, I have not used it before as poppy seeds are banned in my home country. I suggest add it into the dry ingredients.

Yes you can but try not to add too much liquid into it to prevent the cake from becoming soggy
